of late ni suka balik and almost everyday kena prepare this for her breakfast or dinner or at anytime she wants la

well, everybody knows how to make french toast rite? so, no recipe ye!

lemon yogurt muffins

i think i am falling in love with muffins dah now ni hahaha

cemaner buleh suka muffins pulak ye?

well, i think i dah suka muffins yang ada either buttermilk or yogurt jer kot sebab i like the texture yang light, soft and gebus itu. those muffins yang padat padat tu i masih lagi tak suka tau ;-)

and owh! this lemon yogurt muffin is awesome hokkay! ada jugak rasa macam ala ala lemon drizzle cake itu hari… those yang suka lemon cake mesti suka muffins ni..eh, itu kata tekak i lah ye ;-))

Ingredients
  • 1 3/4 cups all-purpose flour
  • 3/4 cup castor sugar  (saya guna 1/2 cup sahaja)
  • 1 tablespoon grated lemon peel
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup lemon or plain yogurt (saya guna yogurt)
  • 6 tablespoons butter or margarine, melted (saya guna unsalted butter)
  • 1 tablespoon lemon juice
  • TOPPING:
  • 1/3 cup lemon juice
  • 1/4 cup sugar
  • 1 teaspoon grated lemon peel
Directions

In a large bowl, combine the first six ingredients.

In another bowl, beat the egg, yogurt, butter and lemon juice.

Stir into dry ingredients just until moistened.

Fill greased muffin cups two-thirds full.

Bake at 200 degrees C for 20-25 minutes or until a toothpick comes out clean.

Cool for 5 minutes; leave muffins in pan.

Using a toothpick, poke 6-8 holes in each muffin.

In a saucepan, combine the topping ingredients. Cook and stir over low heat until sugar is dissolved. Spoon over warm muffins.

kari udang tanpa santan

semalam kepingin sangat sangat nak makan kari udang ni

pepagi buta right after hantar hasya ke kindie, terus pi mencari udang

balik rumah terus siap sedia prepare for my lunch walhal yang nak lunch nye i sorang jek

by 11 am, my kari udang dah siap..huh, sungguh tak sabar nak makan kan. then, sebab masak lebih sikit kari udang ni jugaklah di sambung untuk dinner malam tadi sebabnya i sorang jek yang makan kari ni. hasya memang tak makan kari kari nih..hubster plak masih di bintulu….kiranya masak semalam untuk lepaskan my kepingin lah kan ;-))

ini resepi kari udang tanpa santan my version ye…

bahan bahan
1 tsp jintan putih
1 tsp jintan manis
1 tsp halba
sebiji bawang merah besar di hiris nipis
1 ulas bawang putih di hiris nipis
1 biji tomato di belah 8
6 biji bendi – di potong 3
1/2 cawan air asam jawa
1 1/2 cawan air (bergantung kepada kepekatan yang anda suka)
10 ekor udang
minyak untuk menumis
garam secukup rasa

1 paket serbuk kari ikan babas – di campur sedikit air agar menjadi paste


cara cara
panaskan minyak
tumiskan jintan manis, jintan putih dan halba sehingga naik bau
then masukkan bawang besar, bawang putih dan tomato
gaulkan biar rata sehingga bawang tadi agak kecut sedikit
masukkan serbuk kari ikan babas 
tumis lagi sehingga pecah minyak
masukkan bendi
gaul rata
kemudian masukkan air asam jawa dan air
biar hingga mendidih
kemudian masukkan udang
kecilkan api dan masukkan garam secukup rasa
biarkan di atas api kecil sehingga udang masak

easy peasy kek lapis rempah

hampir lupa kewujudan kek lapis ni

buat kek lapis ni sebelum balik kemaman last week sebab nak habiskan telur punya pasal lah tu

kenapa easy peasy? sebab i rasa senang nak buat and tak banyak bahan kot…ntah lah tapi i suka lah buat kek lapis yang ni n bila part makan kek ni laaagilah i suka

patutla dari dulu lagi shidah suh try..tapi i yang liat sikit nak try sebabnya resepi ni dalam ounce..uishhh macam susah je nak convert  kan..

anyway, here’s the recipe..

saya buat half adunan sahaja dan ini saya dah taruk dalam gram untuk rujukan saya di lain hari ;-)))

 

bahan2
10 biji telur putih
20 biji egg yolk
560 gm butter (saya guna anchor butter sahaja) 
280 gram gula caster (saya kurangkan gula – separuh adunan saya guna 110gm sahaja) 
170 gm gandum
4 tbsp susu pekat
2 tbsp rempah kek lapis


cara2
1. whisk egg whites sampai stiff, then add sugar, whisk lagi until it turns soft/hard peak.
2. in a separate bowl, cream butter and milk hingga kembang, then add egg yolks, mixed well then add, flour and rempah.

3. then, fold in egg white mixture into the flour mixture
4. saya buat separuh adunan, so saya guna pan 7x7. greased pan and bake the first layer using upper and lower for 7 minutes guna temperature 175C..

5. turn down the temperature to 150C for the second layer and next…make sure use the grill or upper fire only ye! 

bake for 5 minutes each and for last layer i baked using the upper and lower fire for 15 mins (7 mins into baking cover your pan with aluminium foil so as to avoid your cake turns too dark)

eh, ayam kampung goreng sambal tempoyak???

 

something was wrong with me kot.

nak masak ayam kampung goreng dan sambal bilis tempoyak..alih alih jadi ayam kampung goreng sambal tempoyak :-PP

i think kan, my otak cannot coordinate my hand motor skill kot…itu pasal pi amik ayam instead of anchovies kan ;-))

or maybe sebab my sambal tempoyak tu dah bertukar kaler, itu pasal pi masukkan ayam instead of anchovies ;-))

sambal bilis tempoyak kan kaler dia ijo macam sambal ijo tu…haii itu lagi satu, masa nak beli cili api tu pun agaknya my eyes dah tak kenal kot kaler ijo ngan kaler merah tu..alih alih balik rumah, ku heran sensorang naperla cili api ni kaler merah..

anyway, what’s done is done kan…dah makan punnn…habis gak berpinggan pinggan nasik ku balun kihkih

 

resepi? no resepi arrrr….gini lah kekdahnya bila otak separa sedar memasak

my sesuka hati oatmeals muffins

menggoda tak rupa dia? katakan aja menggoda yek hahaha kena kata menggoda sebab kalau tak menggoda, tekak ni tak nak makan as i am not muffins and oats person..iyyaaa… i tak suka sangat muffins tapi bila dah takde benda nak di makan as breakfast maka i choose to bake muffins sebab itu yang paling senang and as for oats pulak, hmmmm sometimes tu musykil lak camner oats boleh ada kat rumah ni padahal, sungguhlah tidak suka makan oats ;-))

oats muffins ni i baked tadi pagi sebab tak tau nak makan apa as breakfast..errghhh tak lalu dah nak makan toast bread or cereal… nak keluar pi cari breakfast malas plak, so hentam sajalah buat muffins ni..

here’s  the recipe, ikut sesedap hati i je ni ;-))

ingredients

1 cup rolled oats

1 cup buttermilk  ( i used 1 cup of dutch lady low fat milk and 1 tbsp of apple cider vinegar – add together and leave for 5 minutes ye!)

1 egg, beaten

1/4 cup caster sugar

1/4 cup vegetable oil

1 cup flour

2 teaspoon baking powder

1/2 teaspoon salt

1/4 cup chopped dates

1/4 cup chopped prunes

1/4 grated apple

and 2 tbsp dessicated coconut (itu je yg ada kat rumah…rasanya kalau lg banyak lg sedap kot )

 

Directions

In a bowl, soak oats in buttermilk for 15 minutes.

in a small bowl, beat the egg and oil ( saya whisk pakai tangan je and kejap je whisk tu), then add oatmeal mixture.

in separate bowl, sift flour, baking powder, salt and sugar and then add this dry ingredients together with prunes, dates, apples and coconut into the wet ingredients, mix well

then spoon the batter into prepared muffin cups – saya guna ice cream scoop saja, satu scoop untuk satu muffin cup.

Bake at 200 degrees C for 20 minutes or until toothpick inserted comes out clean. Cool in pan 5 minutes before removing to a wire rack.

apple and cheese tart

semalam mission nak habiskan telur dan segala yang sewaktu dengannya. sempat buatkan kek lapis and then ada balance sebijik lagi telur. so i buat this apple tart..lagipun memang nak kena habiskan apples yang dah hampir lebam and also cream cheese tu.

you know, i love this apple tart so much! love the apples in it and i heart the cheese in it..hmmmm cheese??? iyyyaaa…the very fattening cheese tu lah yang buat  i couldn’t stop myself from munching it non stop hokkay ;-)

sudahnya,  tak makan dinner pun last night..kenyang sangat pasal makan apple tart ni punya pasal

ingredients

Crust:

1 cup (130 grams) all-purpose flour – saya guna tepung gandum

1/3 cup (35 grams) confectioners (powdered or icing) – saya guna icing sugar

1/2 cup (113 grams) cold unsalted  butter, cut into small pieces

 

Filling:

One 8-ounce (227 grams) cream cheese, at room temperature (saya guna philly cream cheese)

1/4 cup (50 grams) granulated white sugar

1 large egg

1/2 teaspoon pure vanilla extract – saya guna 1 tsp vanilla essence

Topping:

1/4 cup (50 grams) granulated white sugar

1/2 teaspoon (2 grams) ground cinnamon

4 cups (500 ml) Granny Smith apples, peeled and cut into 1/4 inch (.6 cm) slices (about 3-4 large apples)

1/3 cup (35 grams) sliced almonds

method:

Preheat oven to 450 degrees F (230 degrees C) and place rack in center of oven.  Grease (or spray with Pam) a 9 inch (22 cm) spring form pan.

Crust: In the bowl of your food processor place the flour and sugar. Pulse to blend together. Add butter and pulse until dough just begins to come together. Pat the dough onto the bottom and one inch (2.5 cm) up the sides of the pan. Cover with plastic wrap and place in refrigerator while you make the filling.

Filling: In a food processor process the cream cheese until smooth. Add the sugar and mix well. Blend in the egg and vanilla essence and process until smooth. Remove the crust from the fridge and pour in the filling. Return to refrigerator while you prepare the topping.

Topping: Combine the sugar and cinnamon in a large bowl.  Toss the sliced apples in the sugar mixture. Spoon the apples evenly over the cream cheese layer and sprinkle with almonds. Place the spring form pan on a larger baking sheet to catch the drips.

Bake at 450 degrees F (230 degrees C) for 10 minutes. Reduce heat to 400 degrees F (205 degrees C) and bake for 25 to 30 minutes or until golden brown (apples are soft when pierced with a fork), and filling is almost set.   Remove from oven and place on wire rack to cool. Sprinkle with confectioners sugar (saya tk sprinkle icing sugar pun..lupa daa….) and serve at room temperature.  Leftovers can be covered with plastic wrap and refrigerated. 

Makes 1 - 9 inch (22 cm) tart
