rindu

 

Tiba tiba terasa rinduuuu sangat nk berblog. Well inilah kejadiannya bila dah mula bohsan dengan mukabuku dan instagram tu. Oh si mukabuku dah ditutup sekejap kewujudannya and si insta pulak dah diam jugak dua tiga hari ni hikhik.... ntah lah tatau nk kata apa tapi tetiba rasa bohsan asyik tengok gambar jek kat insta tu n si mukabuku plakditutup sebab bohsan dengan ulat2 yg menyibuk nak tahu serbaserbi pasal diriku yang tak femes nih hah!

 

Eh, ok I dont want to blabber abt fb n insta lah kat sini. Jst nk share ths awesome recipe yg dh jadi our fav dah nowni. Even mybahrin yg x suka mkn avocado pun suka mkn ini pasta wt avocado ni.


 

Resepinya saya main agak2 je ye.. oh lupa plak now im addicted to pinterest hahaha asal nampak resepi menarik je harus di repinned tapi tk jugak buat2 hahah yg ni amik kat pinterest la ni

 

 

                       Bahan (1-2 org mkn)

                       Penne (rebus hingga lembut)
                       Seulas bawang putih
                       1/2 biji avocado
                       Sedikit olive oil
                       Sedikit lemon juice
                       Sedikit apple cider vinegar
                       Sedikit honey

 

 

* masukkan semua bahan di atas kecuali penne ke dlm  food processor dan blendkan sehingga lumat .
Then gaulkan dgn penne yg dah di rebus tadi

 

Grill kan tomato cherry sehingga lembut dan chopped kan sedikit basil dan tabur je ke atas penne tadi. Season wt salt n pepper secukup rasa. Siap! Boleh makan....enjoy n hv a nice day peeps!

i decided to write in my blog…huhu buleh percaya kaaaa? anyhow percaya aje lah for now kan hikhik the truth is i really missed blogging tapikan sebab iceberg dah terlampau besar kat kepala ni la yang buat kemalasan update blog menjadi jadi..owh to those yang wonder about my other blog tu kan..saya tutup kejap ye! insyaallah akan di buka balik bila tiba masa dan waktu yang sesuai nanti errrkk if tak bukak bukak tu harap maklum la ye empunya diri malas la tuuu

 

hokkay nothing much to say here! just wanted to share this easy peasy recipe with u guys! tried it yesterday n everybody loves it!

90 minutes cinnamon rolls

Ingredients

  • 3/4 cup milk

  • 1/4 cup butter, softened

  • 3 1/4 cups all-purpose flour

  • 1 (.25 ounce) package instant yeast (i used 1 packet dried yeast mauripan je)

  • 1/4 cup white sugar

  • 1/2 teaspoon salt

  • 1/4 cup water

  • 1 egg

  • 1 cup brown sugar

  • 1 tablespoon ground cinnamon

  • 1/2 cup butter, softened

  • 1/2 cup raisins (optional, i used dried cranberries)

Directions
  1. Heat the milk in a small saucepan until it bubbles, then remove from heat. Mix in butter; stir until melted. Let cool until lukewarm.
  2. In a large mixing bowl, combine 2 1/4 cup flour, yeast, sugar and salt; mix well. Add water, egg and the milk mixture; beat well. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has just pulled together, turn it out onto a lightly floured surface and knead until smooth, about 5 minutes.
  3. Cover the dough with a damp cloth and let rest for 10 minutes. Meanwhile, in a small bowl, mix together brown sugar, cinnamon, softened margarine.
  4. Roll out dough into a 12x9 inch rectangle. Spread dough with butter/sugar mixture. Sprinkle with raisins if desired. Roll up dough and pinch seam to seal. Cut into 12 equal size rolls and place cut side up in 12 lightly greased muffin cups. Cover and let rise until doubled, about 30 minutes. Preheat oven to 190 degrees C.
  5. Bake in the preheated oven for 20 minutes, or until browned. Remove from muffin cups to cool. Serve warm

frittata for brunch!!!

 

hello peeps!

let’s see what’s for breakfast today ye!

nothing fancy la ths morning cuma i sempat buatkan sausages and red bean buns saja. well i woke at 3am..haaa awal kan! i think im the one yg suka ketiduran awal n i dont mind bangun awai..erkk actually the truth is i need to bake sicillian orange cake for a friend and she wants it this morning.. hahaha itulah yang sebenar benarnya ye! sebab dah bangun awai sempatla buatkan buns for our breakfast ni

anyhow enough of cake and buns ye!

dah merapu meraban ntah kemana dah ye! anyway what im gonna share with u today is a frittata recipe. heheh frittata ni lebih kurang macam omellete jugak tapi i suka buat sbb bila dh mkn as breakfast then buleh pulak di bawak ke lunch or if takmo makan pagi n tengahari makan sajalah for brunch.

o9k ths is one of my favourite frittata recipe..kenapa favourite? sebabnya slalu buat ni nak habiskan spinach tu! haiii i dunno know la org lain beli spinach byk mana tapi tiap kali beli spinach satu ikat tu tak buleh habis tau kat rumah ni. iyo laa saya hanya tahu masak tumis bayam bodo bodo tu je hahaha sbb tu kot my hubby tk sker spinach. so kan sebab nak suruh en suami makan spinach ini lah caranya ye hehehe

hokkay! here’s the recipe

ingredients

4 eggs

1/2 cup low fat milk

fresh spinach, rinsed, dried and torn into roughly 1-inch pieces (suka hati nak banyak mana)

2 slices of beef stripes

1/2 large onion, peeled and diced

1/2 cup grated cheddar cheese

salt, to taste

Preparation:
  1. Preheat oven to 200°C.
  2. Cook the beef stripes until crispy, remove it from the pan, drain on paper towels and set aside. When it's cool, roughly chop it into ¼ inch pieces — or just crumble it up.
  3. Then sauté the onion for 2 to 3 minutes or until it's slightly translucent and put aside
  4. In a glass mixing bowl, thoroughly beat the eggs until nice and frothy. Add the milk and stir until combined. Season to taste with salt.
  5. Pour the egg mixture into the baking dish, add the cooked onions, spinach and beef stripes and sprinkle grated cheddar cheese on top.
  6. Bake the frittata in the preheated oven for 15-20 minutes or until the egg is fully cooked (golden brown on top)

the cake

 

yup! the cake that makes me want to eat and eat and eat all day long hahaha nasib baik dah petang masa siap bakar kek tu! if not harusla breakfast lunch and dinner wud be that cake kan! owh! im talking about the sicillian orange cake heheh

my all time favourite cake!

tapikan apa salahnya nak taruk lagi skali kan! kan!  hahaha actually nak panaskan enjin nak update blog yang dah lama terbiar kering kontang nih! haiii tiap hari pasang niat nak update blog but tiap hari jugak tak terupdate! Anyhow i hope after this buleh lah update dengan jayanya ye!

hokkay here’s the recipe!

sicilian orange cake

ingredients

250 g lightly salted butter, at room temperature, plus extra for greasing

250 g caster sugar (i used 200gm)

4 medium eggs

1 1/2 tsp finely grated orange zest

250 gm self raising flour 

85 ml freshly squeezed orange juice ( i used 2 oranges)

For the icing:

125 g icing sugar ( i cuma sempat sprinkle icing sugar je)

5 tsp freshly squeezed orange juice ( tk taruk pun)

Method

Preheat the oven to 170C. Greased and line a 22-cm clip-sided round cake with non-stick baking paper. (i used 9” round pan)

Using an electric whisk, cream the butter and sugar together for 4-5 minutes until very pale. Beat in the eggs, one at a time, beating very well between each one, if necessary adding a spoonful of flour with the last egg to prevent the mixture from curdling. Beat in the orange zest. Add the flour all at once and mix in well, then slowly mix in the orange juice.

Spoon the mixture into the prepared tin and bake on the middle shelf of the oven for 45-50 (my oven 50-55) minutes or until a skewer, inserted into the centre of the cake, comes out clean. If it starts to brown too quickly, cover loosely with a sheet of lightly buttered foil.

Leave the cake, in its pan, to cool on a wire rack, then carefully remove the sides and base of the tin and peel off the paper. Put it onto a serving plate.

For the icing, sift the icing sugar into a bowl and stir in the orange juice until you have a spreadable consistency. Spread it over the top of the cake, letting it drip down the sides, and leave to set. Serve cut into slices, and store any leftovers in an airtight container.

blueberry sour cream muffins

 

Hullo peeps!

i woke up early ths morning semata mata nak buat muffins ni Smile with tongue out

hek eleh hari hari bangun kul 5.45 pagi..today jek terjaga kul 5.30 pagi pun dah bising eh Smile with tongue out

 

yup! for those yang tertanya tanya tu kan..saya ni taklah selalu buat breakfast di pagi hari tapi kadang kadang tu saya buatla sebab suami dan anak saya ni makan pagi di rumah saja tiap pagi.

erkkk actually statement tu kena betul skit ye! depa tu buleh je makan cereal tapi awak tu yang tk suka cereal dan maaalas nak pi kedai beli breakfast makanya haruslah awak yang terkedek kedek merajinkan diri lah ye hikhik Open-mouthed smile

eheee enough of blabber gabble ye! anyhow i did make these wonderful blueberries muffins for our breakkie and here’s the recipe.

Ingredients – makes 7 muffins

  • 1 egg

  • 1/2 cup castor sugar

  • 1/4 cup vegetable oil (i used canola oil)

  • 1/2 teaspoon vanilla extract

  • 1 cup all-purpose flour

  • 1/4 teaspoon salt

  • 1/4 teaspoon baking soda ( i accidentally put the BAKING POWDER ye!)

  • 1/2 cup sour cream

  • 1/2 cup blueberries

Method

  1. Preheat oven to 400 degrees F (200 degrees C). Grease 24 muffin cups or line with paper muffin liners.
  2. In large bowl beat eggs, gradually add sugar while beating. Continue beating while slowly pouring in oil. Stir in vanilla. In a separate bowl, stir together flour, salt and baking soda (in my case baking powder).
  3. Stir dry ingredients into egg mixture alternately with sour cream. Gently fold in blueberries. Scoop batter into prepared muffin cups.
  4. Bake in preheated oven for 20 minutes.

Crepes and apples for breakfast

another easy peasy breakfast that i always make for my family during weekdays Smile with tongue out 

normally buat crepes ni bila buat pancakes sebabnya bila dah buat pancakes separuh lagi separuh tu i just tambah aje air dlm pancakes batter tu n terus lah jadi crepes kan. that’s why la all this while malas nak taruk recipe crepes ni kat sini sebab takde exact recipe yg di guna

anyway tadi pagi i tried ths recipe yang i jumpa kat all recipe mlm tadi. terpengaruh bila baca banyaknya review yg kata this is the best crepe recipe so i pon mencuba lah tadi pagi

hasilnya…hmmmm sodap and saaaangat senang nak ingat all the ingredients tu

jadinya pahni buleh la makan crepes je puas puas hikhik takyah la dok confius nak mkn crepes ke pancakes kan

ok here’s the recipe

Original recipe makes 8 crepes

ingredients

  • 1 cup all-purpose flour

  • 2 eggs

  • 1/2 cup milk

  • 1/2 cup water

  • 1/4 teaspoon salt

  • 2 tablespoons butter, melted

 

Directions
  1. In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  3. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot

 

and this is how i made the sautee apple tu (nk makan ngan honey or choc sauce aje pun tkpe..td terlebih rajin sbb nak habiskan apples je)

2 biji apple – diced

1 tbsp sugar

1 tbsp butter

a pinch of nutmeg powder n a pinch of cinnamon powder

put everything in non stick pan until the apple pieces are soft (ala2 mcm nk taruk dlm appie pie filling tu)

nak buat pun sangat senang kan!

here’s the recipe..can make 2 serving (2 bijik omelette)

ingredients

4 eggs

a pinch of salt

1/4 tsp black pepper (suka hati nk banyak mana la)

1 tomato – slice kan nipis2

shredded mozarella cheese (ikut suka hati nak banyak mana ye)

 

method

pecah kan telur macam nak buat telur dadar tu hahaha dah namanya omelette tentu tentulah telur dadar kan!

add salt n pepper

then panaskan non stick pan n taruk skit olive oil kat pan tu

bila pan dah panas masukkan separuh telur tadi n pusing ke cemana nak cakap eh..as long as the egg mixture tadi rata kat keliling pan tu la ye

then bila nampak macam dah nak masak tu taruk je tomato slices tu n taburkan shredded mozarella cheese tu n lipat dua dadar tadi ye!

biar sekejap for about 1 minit n then dah siap!

boleh tabur fresh oregano b4 makan tu tapi kami slalu makan ngan cili sauce aje Smile

Apple and Oats Muffins for breakfast

Just finished my breakfast and yup that is my plate ye Open-mouthed smile

anyway im still in no mood to cerita ceriti panjang lebor. well… this is a recipe blog kan! so no cerita lah! just recipe saja lah ye Smile with tongue out

here’s the recipe (i made half recipe n get 6 pcs of muffins)

Ingredients

  • 1 cup (150g) self-raising flour
  • 1 cup (150g) plain flour
  • 1 1/2 tsp baking powder
  • 3/4 cup tightly packed brown sugar
  • 1/2 cup rolled oats, plus 1 tbs extra
  • 1 1/2 cups (375ml) vanilla yoghurt, at room temperature
  • 2 eggs, lightly beaten
  • 100ml light olive oil
  • 1 red or green skinned apple, thinly sliced

Method

  1. Preheat oven to 180°C. Grease 2 x 6 Texas (large) muffin pans with cooking spray or line with muffin cases.

  2. Sift flours and baking powder together. Stir in sugar and oats. Whisk yoghurt, eggs and oil together. Add to flour, mix until just combined. Do not over-mix.
  3. Divide mixture evenly into muffin pans until three-quarters full. Gently push slices of apple into mixture until covered and sprinkle with extra rolled oats.
  4. Bake for 25 minutes or until golden in colour and cooked when tested. Cool for 5 minutes in pan before transferring to a wire cake rack. Serve warm.

bruschetta time

yup! i made bruschetta for dinner malam tadik!

al kisahnya kemalasan menjelma bila kena makan dinner sensorang nih..well, of course hasya is around but she and her own menu ehehe minah tu jaaaarang skali makan dinner yang sama dengan mak pak dia. always spaghetti bolognese or pizza or toast bread or mac n cheese or macaroni soup or whatever lah food dia yang i dah tak lalu nak makan dah…no spicy wehhh itu pasal mak tak sker

anyway back to my bruschetta tu malam tadik first time mencuba tomato bruschetta ahahaha this is one of the recipe yang i dah bookmarked bertaun taun dah tapi tak terbuat buat walaupun aaaamatlah senangnya..

naper tak buat? sebab i kurang sker makan tomato tapi paksa rela makan tomato sebab orang kata makan tomato buleh bagi kulit cantik ahahaha nak gak kulit cantik kan kan!

well here is the recipe!

basically i main ingat ingat lupa apa yang i nampak Giada buat kat tv many many many many moooooons back ye!

giada guna fresh basil and add mozarella cheese rasanya but i takdak fresh basil so i guna jek dried basil and no cheese for me…tkmo demuk ahahaha :D

ingredients untuk sorang makan

4-5 keping roti – i guna baguette, nak guna gardenia pun buleh je…sapu sikit garlic spread and toast dlm oven for 5 min or sampai golden brown

1 biji tomato – potong dadu

1 tbsp extra virgin olive oil

dried basil – sesuka hati nak banyak mana

sedikit salt and  ground pepper

sedikit parmesan cheese

method

dalam salad bowl, gaulkan tomato yang dah di pototng dadu dengan evoo, dried basil garam dan ground pepper

bila baguette dah siap di toast, amik 2 tbsp tomato mixed tu and taruk je kat atas toast baguette tu

tabur dengan parmeesan cheese skit (ehehe nak jugak ada cheese ye)

Dulu kini dan selamanya

 

ececeh macam bercinta pulak ye! heheh Smile with tongue out

yang sebenar benarnya nak bagitau saya sangat cinta sama ini kek!

yup!! finally i baked the victoria sandwich cake! all this while mkn sepotong kat kedai ajek. reason why tak bake this earlier was because takut hb tak sker ahahaha ada ke patut bagi reason tu ye! padahal hb sker tapi i yang agak keberatan nak buat..erkkk dun ask me why ye! sometimes tu kemalasang yang agak lebih kot hikhik

the above picture tu was masa first time buat dulu…hmmmm tak sabar nak makan sampai senget benget ku layer kan kek tu haha gasaklah labuuu..nak masuk perut jugak kan!

this one when i used round pans…see the mixed berries jam yang meleleh leleh tu! haiiii so gebu and delish sangat tau kek ini Winking smile

and here is the recipe!

Ingredients

250g butter, leave soft, I used scs
250g caster sugar, I used 180g because I added golden syrup
5 large eggs
1 tsp vanilla extract
1 tbsp golden syrup
2-3 tbsp milk

280g self-raising flour

Method

Preheat oven at 170C.

Cream butter and sugar and vanilla until light and fluffy. sometimes i used my wooden ladle and sometimes i used my stand mixer..tengok kerajinan ye!

Add eggs in three additions! 

Lastly add srf in 3 additions, fold in milk, vanilla extract and golden syrup until incorporated.

** first time buat I accidentally used 2, 7” square cake tins (nak guna 8” pan tapi silap amik daaa)...and nak tak nak i had to slice it into 2 lah..so end up i have 4 layers of cake hahaha!

Bake for about 30 minutes until golden in colour.

Let cool and sandwich with Raspberry jam (i used mixed berries), and sprinkle sugar on top!

dushhhh! when was the last time did i post an entry here eh?? suddenly teringat lupanya i ada recipe blog ye! hahaha tetiba hilang ingatn kejap ye!

anyway, this is for mamahawa. thank you mama for reminding me that i have a recipe blog heheh Smile with tongue out

the recipe

ooops..ok ok.. separuh jalan eh! kena type la gamaknya huhu

Buttermilk scones

makes 12 scones (since im using the gedabak cookie cutter so i only managed to get 6 scones ajek..haaa imagine lah ye besar mana my scones tu hahaha)

ingredients

75gm butter, diced

350gm self raising flour, plus extra for dusting

1/2 caster sugar ( i guna x sampai 1/2 pun but lebih skit dari 1/3)

3/4 cup buttermilk or natural plain yogurt ( i used 3/4 cup low fat milk with 3/4 tbsp apple cider vinegar – leave for at least 10 minutes before using it)

raspberry jam or strawberry jam to serve

method

preheat the oven to 200C

sift flour into large bowl (i tk buat pun coz x sabar nk makan heheh) and add the diced butter

rub together with fingertips until the mixture resembles fine breadcrumbs

then stir in sugar and mix and then make a well in the centre and

add the buttermilk or yogurt

stir in lightly until the mixture forms a soft dough

then turn the dough out on to a lightly floured surface and knead lightly

roll out to a 2.5cm thickness

then stamp out rounds using cookie cutter n then gather up the trimmings, re knead n stamp out more rounds until finish

put the rounds on the baking sheets and bake for 12-14 minutes ( i bake for 17 minutes) or until risen and light golden

allow to cool on wire rack and serve split open with jam and cream or butter

oooh! scones fresh from the oven!!! heaven babeh Smile with tongue out

dah banyak kali buat chocolate whoopie pies ni tapikan asyik luuuupa ajek nak buat entry about it..erkkk actually malas sebenarnya hahaha pecah rahsia kan!

ok here’s the recipe..

took it from joyofbaking and i tell u this recipe is worth keeping…sedap bangat hokkay! i’ve tried both the red velvet whoopie pies pun sodap and this chocolate whoopie pies ni pun i dah try 2 versions jugak…with and without coffee flavor and both sedap…erkkk itu kata my friends jugak ye hahaha

ingredients

1 3/4 cups (230 grams) all purpose flour (guna tepung gandum je)

3/4 cup (75 grams) cocoa powder

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt  (omit this)

3/4 cup (170 grams) unsalted butter (guna salted butter), room temperature

3/4 cup (150 grams) granulated white sugar

1 large egg, room temperature

1 teaspoon pure vanilla extract

1/4 cup (60 ml) buttermilk (1/4 cup low fat milk with 1/4 tbsp apple cider vinegar)

1/2 cup (120 ml) lukewarm strong coffee or 1/2 cup (120 ml) lukewarm water

method

Preheat oven to 375 degrees F (190 degrees C) and place oven rack in the center of the oven. Line two baking sheets with parchment paper.

In a large bowl sift together the flour, cocoa powder, baking powder, baking soda, and salt.

In the bowl of your electric mixer, fitted with the paddle attachment (can also use a hand mixer), beat the butter and sugar until light and fluffy.

Add the egg beating well. Beat in the vanilla extract. In a small measuring cup, mix the buttermilk and coffee (or water).

With the mixer on low speed, alternately add the flour mixture and buttermilk/coffee mixture, in three additions, beginning and ending with the flour.

Drop heaping tablespoons (can also use a small ice cream scoop –i used piping bag ;-) ) of the batter onto the prepared baking sheets, spacing about 2 inches (5 cm) apart.

With moistened fingers or with the back of a spoon, smooth the tops of the cookies.

Bake for about 9 - 10 minutes or until the tops of the cookies, when lightly pressed, spring back. Remove from oven and transfer to a wire rack to cool completely.

as for the buttercream..saya guna swiss meringue buttercream ni jek

ingredients

1/4 cup sugar
1 large egg white
6 tablespoons butter, softened ( i used scs unsalted)

Whisk egg whites and sugar together in a big metal bowl over a pot of simmering water. Whisk occasionally until you can’t feel the sugar granules when you rub the mixture between your fingers.

Transfer mixture into the mixer and whip until it turns white and about doubles in size. (Here’s a tip: when you transfer to the mixer, make sure you wipe the condensation off the bottom of the bowl so that no water gets into the egg whites. This can keep them from whipping up properly.)

Add the vanilla.

Finally, add the butter a stick at a time and whip, whip, whip
