buat muffins ni petang semalam.
sebab dah late lunch, muffins yang patutnya nak makan petang tu jadik makan malam ler pulak :D
ekeke saja je cari alasang tak nak masak for dinner ye!
anyway, muffin ni terjadi sebab terjumpa sebijik epal yang dah lama terperam dalam peti ais tu. godek2 recipe, terjumpa lah recipe ni kat sini. tak rugi mencubanya sebab sedap babe! the texture is so gebuss altho takde guna buttermilk pun! hmmm buleh diguna pakai lagi lah recipe ni!
buat separuh adunan jek and dapat 6 bijik size L ni and lg 6 bijik size S. size S tu dah di bekalkan pada hubster yang pi main golf kejap tadi dengan harapan bertambah2lah tenaga nak pukul bola tu ye! ahahaha so poyos tul lah minah tu :P

Ingredients (yg ni yg 1/2 adunan yg i buat tu ye!. recipe asal buleh click kat link kat atas tu ye!)
- 1/2 cups caster sugar (i taruk penuh2 cup tu)
- 1 Cup plain flour (tepung gandum jek)
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 1/2 cup sultanas
- 1 cup grated carrot (i guna sebijik carrot size sedang jek-parut)
- 1/2 cup grated apple (i guna sebijik green apple grany smith- parut)
- 1/2 cup desiccated coconut
- 1/2 cup chopped walnuts (1 amik segenggam)
- 2 eggs
- 1/2 cup (125ml) vegetable oil (i used canola oil)
- 1 tsp vanilla extract
- Icing sugar, to dust
Method

Preheat oven to 180°C. Use paper cases to line muffin pans.

Sift sugar, flour, cinnamon and powder into a large bowl. Add sultanas, carrot, apple, coconut and walnuts.

In a separate bowl, beat together the eggs, oil and vanilla. (yang ni i mix pakai sudip kayu je. tengok eggs dah bersatu ngan minyak dah ok la tu)

Add to the dry ingredients and fold until just combined - do not overmix.

Spoon(i scooped using the ice cream scoop – satu scoop satu muffin cup) into muffin pans and bake for 25 minutes or until golden brown.

Serve dusted with icing sugar
