today….

 

i decided to write in my blog…huhu buleh percaya kaaaa? anyhow percaya aje lah for now kan hikhik the truth is i really missed blogging tapikan sebab iceberg dah terlampau besar kat kepala ni la yang buat kemalasan update blog menjadi jadi..owh to those yang wonder about my other blog tu kan..saya tutup kejap ye! insyaallah akan di buka balik bila tiba masa dan waktu yang sesuai nanti errrkk if tak bukak bukak tu harap maklum la ye empunya diri malas la tuuu

 

hokkay nothing much to say here! just wanted to share this easy peasy recipe with u guys! tried it yesterday n everybody loves it!

90 minutes cinnamon rolls

Ingredients

  • 3/4 cup milk

  • 1/4 cup butter, softened

  • 3 1/4 cups all-purpose flour

  • 1 (.25 ounce) package instant yeast (i used 1 packet dried yeast mauripan je)

  • 1/4 cup white sugar

  • 1/2 teaspoon salt

  • 1/4 cup water

  • 1 egg

  • 1 cup brown sugar

  • 1 tablespoon ground cinnamon

  • 1/2 cup butter, softened

  • 1/2 cup raisins (optional, i used dried cranberries)

Directions
  1. Heat the milk in a small saucepan until it bubbles, then remove from heat. Mix in butter; stir until melted. Let cool until lukewarm.
  2. In a large mixing bowl, combine 2 1/4 cup flour, yeast, sugar and salt; mix well. Add water, egg and the milk mixture; beat well. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has just pulled together, turn it out onto a lightly floured surface and knead until smooth, about 5 minutes.
  3. Cover the dough with a damp cloth and let rest for 10 minutes. Meanwhile, in a small bowl, mix together brown sugar, cinnamon, softened margarine.
  4. Roll out dough into a 12x9 inch rectangle. Spread dough with butter/sugar mixture. Sprinkle with raisins if desired. Roll up dough and pinch seam to seal. Cut into 12 equal size rolls and place cut side up in 12 lightly greased muffin cups. Cover and let rise until doubled, about 30 minutes. Preheat oven to 190 degrees C.
  5. Bake in the preheated oven for 20 minutes, or until browned. Remove from muffin cups to cool. Serve warm

bruschetta time

yup! i made bruschetta for dinner malam tadik!

al kisahnya kemalasan menjelma bila kena makan dinner sensorang nih..well, of course hasya is around but she and her own menu ehehe minah tu jaaaarang skali makan dinner yang sama dengan mak pak dia. always spaghetti bolognese or pizza or toast bread or mac n cheese or macaroni soup or whatever lah food dia yang i dah tak lalu nak makan dah…no spicy wehhh itu pasal mak tak sker

anyway back to my bruschetta tu malam tadik first time mencuba tomato bruschetta ahahaha this is one of the recipe yang i dah bookmarked bertaun taun dah tapi tak terbuat buat walaupun aaaamatlah senangnya..

naper tak buat? sebab i kurang sker makan tomato tapi paksa rela makan tomato sebab orang kata makan tomato buleh bagi kulit cantik ahahaha nak gak kulit cantik kan kan!

well here is the recipe!

basically i main ingat ingat lupa apa yang i nampak Giada buat kat tv many many many many moooooons back ye!

giada guna fresh basil and add mozarella cheese rasanya but i takdak fresh basil so i guna jek dried basil and no cheese for me…tkmo demuk ahahaha :D

ingredients untuk sorang makan

4-5 keping roti – i guna baguette, nak guna gardenia pun buleh je…sapu sikit garlic spread and toast dlm oven for 5 min or sampai golden brown

1 biji tomato – potong dadu

1 tbsp extra virgin olive oil

dried basil – sesuka hati nak banyak mana

sedikit salt and  ground pepper

sedikit parmesan cheese

method

dalam salad bowl, gaulkan tomato yang dah di pototng dadu dengan evoo, dried basil garam dan ground pepper

bila baguette dah siap di toast, amik 2 tbsp tomato mixed tu and taruk je kat atas toast baguette tu

tabur dengan parmeesan cheese skit (ehehe nak jugak ada cheese ye)

hasya and tortilla bread

 

Dia dapat resipi ni masa dia pi cooking class itu hari ;-)

bila dah ada recipe and dah tahu cemana nak membuatnya, hari hari dia dok nag her mommy nak buat tortilla

bila i tanya why nak buat tortilla using this recipe, dia jawab sebabnya her tuti frutti pizza base itu hari tastes like tortilla

ini rupa her pizza base itu hari. memang pun ada rupa tortilla and tastewise pun ada macam makan tortilla jugak

sebab dah almost everyday mintak nak buat tortilla so today i buatkan dough tu using the above recipe and let her do the rest la…alaaa semua bahan tu i campak ajek dalam my stand mixer and let the mixer ulikan sampai jadi dough n then restkan for 1 hr. pastu hasya cuma guna rolling pin and flatkan the dough aje..ehehe bersemangat dia dok buat macam yang instructor dia ajar itu hari :D

banana bread butter pudding

banana and bread…hmmmm i just love their combination ;-)

paling suka makan peanut butter with banana and toast bread..hadoiii itu adalah salah satu menu untuk lunch saya ye!

saya jarang masak untuk lunch. just makan apa yang ada aje..slalunya makan leftover dinner the nite before. itu kalau ada leftover, kalau takde leftover, cukuplah dengan fruits and yogurt or bread and peanut butter aje…haiii terukkan! memang kemalasan tahap gaban nak kelentung kelentang kat dapur semata mata untuk saya makan sorang ajek. kiranya dapur kat rumah tu hanya berbunyi kelentung kelentang bila nak malam ajek kot!

anyway, i made this wonderful banana bread butter pudding for my late lunch or should i say luntea sebabnya buat bbbp ni waktu tea time ;-)

inspired by jamie oliver punya recipe tapi saya adjust sikit mengikut apa yang ada dalam dapur tu

bahan bahan

6 keping roti gardenia – potng serong dan leperkan dengan sudu or whatever lah ye!

softed butter (untuk sapu pada roti dan bekas)

2 biji telur

1/4 cawan fresh cream

1/4 cawan susu segar atau susu cair

1/4 cawan gula castor (ikut kemanisan masing2 ye)

1 tsp vanilla essence

4 -5 biji pisang emas (suka hati nak pisang banyak mana ye! kat rumah ada 5 bijik je)

roasted almond (nak ganti ngan any types of nuts or raisin pun ok jugak)

icing sugar for dusting

Cara Cara

sapukan butter pada setiap keping roti dan keliling bekas

dalam bekas lain, pukul telur dengan gula kastor sehingga gula hancur

then masukkan fresh cream, vanilla essence dan susu cair

kacau rata

kemudian celupkan sekeping roti ke dalam adunan telur dan susu tadi

susun roti di dalam bekas bakar agar menutupi bahagian bawah dan tepi bekas

then susun pisang yang dah di potong serta taburkan almond

then susun lagi roti sehingga habis

tuangkan lebihan adunan susu dan telur tadi ke dalam bekas berisi roti dan bakar dalam oven selama 30 minit pada suhu 180C

dah siap, taburkan icing sugar dan boleh di hidangkan begitu sahaja! sedap dan lajat di makan masa puding ni masih warm!

roti john

 

 

demi chinta kat dia maka gigih mak buatkan roti john inih tau!

i ni memang tak serasi sangat dengan roti john. dunno why tapi i memang kurang suka roti john. kalau makan pun cuma one bite ajek tau! hubster pulak suuuuka sangat beli roti john bila tiba ramadhan and since this year kan i dah warned him not to go to bazaar ramadhan makanya terpaksa lah i buatkan roti john for him

adusss memang i really have no idea on how to make the roti john tuh..tengok youtube..sib baik paham hahaha kalau tak paham jugak tatau nak kata apa lah kan!

anyway, sebab i yang buat sendiri roti john ni maka i pun buleh layan jugaklah…buleh lah habiskan seketul roti tu…not bad la kan…adakah daku ferasan roti john ku sedap??? hahaha dah lapar babe! makan aje lah

ini resepinya…sesuka hati saya ni ye!

bahan bahan

2 ketul roti oblong untuk hotdog tu

2 biji telur

sedikit daging – about 1/4 tapak tangan – di potong halus or if nak guna minced beef pun ok jugak about 3 tbsp

1 biji bawang merah besar – potong dadu

1 biji bawang putih – potong dadu

2 biji cendawan butang – rendam sekejap dan hiris nipis

1 tbsp serbuk kari daging – jadikan pes (kdg kdg saya guna je daging dari lebihan masakan kari daging tu….siat siat halus je daging yang dah lembut tu)

1/4 biji capsicum – potong dadu

sedikit daun bawang dan daun sup

garam secukup rasa

sedikit worcestershire sauce – about 1 tsp

2 tbsp olive oil

sedikit sos cili

sedikit mayonaise

Cara cara

panaskan olive oil dalam non stick pan

tumis bawang merah dan putih hingga naik bau

then masukkan daging tadi…biar hingga kering air dan daging masak

then masukkan pes kari tadi ( step ni boleh di abaikan sekiranya anda menggunakan lebihan kari daging)

kacau sekejap then masukkan capsicum, cendawan dan worcestershire sauce

perasa kan dengan garam

tutup api – ketepikan

belah dua roti oblong tadi tapi jangan sampai putus satu bahagian tepi tu

pecahkan telur dalam bekas – kacau dengan garfu

kemudian masukkan bahan yang di masak tadi beserta daun bawang dan daun sup ke dalam bancuhan telur tadi

guna api kecik, panaskan non stick pan dan tuangkan separuh adunan talur tadi ke atas nonstick pan dan letakkan roti yang telah di belah tadi menutupi bancuhan telur tadi

bila nampak telur dah masak, boleh terbalikkan roti tadi dan boleh di angkat

sebelum di hidang, sapukan sedikit mayonaise dan sos cili.

Bingka Roti Berlauk

buat bingka roti berlauk ini untuk berbuka puasa semalam. mulanya i tak nak puasa tapi bila hubster n mak mentua nak puasa, maka i pun puasa jugak lah ;-) yang tak puasa cuma hasya and pak mentua aje

elok je bingka ni baru keluar from the oven, BIL punya family pulak sampai… so kan, memang harum semerbak bau bingka ni. my biras pelik aje sebab dia ingat i buat inti karipap dengan jayanya padahal dia tahu sangat yang i ni tak pernah buat karipap pun all this while ;-)

anyway, all of us love this bingka roti berlauk especially my biras tu suka sangat bingka ni... sedap dan lazat gitu, even for me yang memula tu takut gak nak makan coz takut bukan taste i kan! ha ah, buat bingka ni pun pasainya ada roti kat rumah n saja nak mencuba resepi ni sebab suka tengok rupa paras bingka roti ni yang agak meriah tu.

Bahan bahan untuk Bingka

10 - 12 keping roti putih (saya guna 11 keping termasuk bahagian tepi roti tu skali ;-))
800 ml santan (saya guna 1 kotak santan kara 200ml di campur dengan 600ml air)
3 tbsp tepung gandum
3 tbsp mentega, dicairkan
3 biji telur (saya guna gred B)
Garam secukup rasa


Bahan untuk Lauk
400 g daging cincang (saya guna chicken breast yang di potong dadu)
2 biji bawang besar, dicincang (saya potong dadu)
1 biji kentang, kupas dan didadu kecil
1 biji lobak merah, didadu kecil
2 ulas bawang putih*
1/2 inci halia*(*ditumbuk halus)
3 camca besar rempah kari daging (saya guna rempah kari daging baba’s)
3 tbsp sos tomato
3 tbsp sos cili
500 ml air (saya guna 200-250 ml je)
Serbuk lada hitam (jika suka- saya tak masukkan)
Garam secukup rasa


Bahan Hiasan


Hirisan daun sup
Hirisan daun bawang
Hirisan cili merah
Bawang goreng


CARA CARA

UNTUK BINGKA ROTI:-

Panaskan oven pada suhu 190C, lengser tin berukuran 10 x 10 inci dengan butter.(saya guna pan 9x9 inci je) Ketepikan.

Roti disiat2 kecil dan rendam dengan santan tadi hingga kembang kemudian masukkan semua bahan untuk bingka kecuali garam, dan kacau hingga sebati. Perasakan dengan sedikit garam. Tuang dalam tin tadi dan bakar 30 minit.

 

UNTUK LAUK :-

Panaskan sedikit minyak dalam kuali, tumis bawang besar, bahan tumbuk hingga harum,

masukkan rempah kari, sos tomato dan sos cili.

Kacau rata dan masukkan daging, kentang dan lobak merah.

Tuang air dan masak hingga kentang dan lobak lembut.

Tambah garam secukup rasa dan masak hingga kering. Kalau suka boleh tambah lada hitam. Angkat dan sejukkan.

 

UNTUK BINGKA ROTI BERLAUK :-

Keluarkan bingka dari oven tadi.

Tabur bahan lauk (n0.2) atas bingka dan ratakan, kalau dapat, baki minyak dari bahan lauk jangan dimasukkan sekali.

Sambung membakar selama 30 - 35 minit lagi.

Bila masak sejukkan sepenuhnya. Tabur dengan bahan hiasan dan boleh potong untuk disaji sebagai minum petang atau sarapan pagi

i’m loving it!!!

 

no  not mcD ye! i’m talking about this cinnamon sugar pull apart bread ;-)

semalam buat lagik and this time i add raisins and use less sugar…the result was superb. hubster likes this one better..of course la sebab dia kan tak suka sangat cinnamon tuh..

hokkay, enuff of talking..here’s the recipe..kali ni i copy resipi dalam bahasa malaysia ye! copy from dairimama..thanks shidah ;-)

Bahan bahan

untuk doh roti

2 3/4 cawan plus 2 tbs tepung gandum
1/4 cup gula kasar (saya guna gula castor)
2 1/4 sudu kecik yeast
1/2 sudu kecik garam
4 tbs butter
1/3 cup susu penuh krim (saya guna dutch lady low fat milk)
1/4 cup air
2 biji telur (saya guna size B)
1 sudu kecil Vanilla extract (saya guna 1 sudu besar esen vanila)


untuk inti

bahan bahan
1 cawan gula kastor (saya guna 1/4 cawan)
2 sudu kecil serbuk kayu manis (cinnamon) (saya cuma guna 1 sudu kecil sahaja)
1/2 sudu kecil serbuk buah pala (nutmeg)
4 tbs butter - dicairkan sehingga menjadi brown

1 cawan raisins (yang ini saya tambah)

CARA CARA

- Dalam mangkuk yang besar, campurkan 2 cawan tepung, gula, yeast, and garam. Ketepikan
- Pukul telur, ketepikan
- Dalam small saucepan, campurkan susu dan mentega, panaskan sehingga mentega cair. Ketepikan dan masukkan air dan vanilla extract. Biarkan seketika sehingga mixture menjadi suam2 kuku.
- Tuangkan mixture susu dan mentega tadi kedalam bahan kering, kacau dengan senduk.

- Masukkan telur dan kacau lagi. Add 3/4 cup tepung, dan uli sehingga sebati. The dough will be sticky.

- Masukkan dough kedalam mangkuk besar yang telah di gris dengan butter/minyak. Tutup dengan kain atau cling wrap, biarkan sehingga dough naik 2 kali ganda.
note : dough yang the naik, boleh disimpan di dalam peti semalaman, dan diguna keesokan hari. (I skipped this)


- Sementara menunggu dough naik, campurkan gula, serbuk kayu manis dan serbuk buah pala di dalam mangkuk. ketepikan

- bahagikan doh yang telah naik tadi kepada 2 bahagian

- tumbuk tumbuk sikit doh tadi untuk buat angin dalam dough tu

- kemudian canaikan dough tadi di atas papan pencanai yang telah di tabur sedikit tepung gandum. saya canaikan kepada bentuk 4 segi tepat

- kemudian, beruskan bahagian atas dengan butter yang telah di cairkan tadi dan taburkan dengan campuran serbuk kayu manis,gula dan buah pala tadi. taburkan juga raisins di atas serbuk campuran gula tadi

- bahagikan dough tadi kepada 6 bahagian yang hampir sama besar

- susun (stack) potongan doh tadi dan bahagi kan kepada 5 atau 6 bahagian lagi (potongan kecil yang buleh muat dalam loaf pan)

- kemudian, susun di dalam loaf pan yang telah di gris dengan butter dan gandum

- biarkan lagi dough ini sehingga naik 2 kali ganda lagi (about 1 hour jugak)

- bakar di dalam oven yang telah di panaskan pada suhu 180 C selama 30 minit atau sehingga bahagian atas telah menjadi coklat keemasan. (bila warna bertukar ke coklat keemasan, menunjukkan bahagian dalam juga telah masak)

- keluarkan dari oven dan biarkan sejuk sekurang kurangnya selama 30 minit

- keluarkan dari loaf pan and can be served warmly with coffee o9r tea. boleh juga di simpan di dalam air tight container selama 2 hari

Cinnamon Sugar Pull Apart Bread

sebab nama yang panjang and bila tengok resipi yang macam susah sangat nak membuat dia tu makanya aaaaamat lama betul i peram recipe nih

nampak kat rumah shidah many many moons back tapi malu malu kucing nak mencuba sebab tak confident hubster buleh makan ke tak sebabnya dah namanya cinnamon kan…ahmad tu kurang suka anything yang ada cinnamon nih…

anyway, 2 days ago berjaya buat roti ni sebab kerajinan datang melanda hikhik….

owh, peluh peluh kejap makcik sebab panic kenaaaapa lah dough dia ni very very sticky..haiii sib baik makcik tak nangis and campak ajek dough ni masuk mr T sebab takut tengok sticky dough tuh…then bila reread and reread the recipe tu, memang ada mentioned yang dough ni memang sticky… so,i just prayed that my dough will turn out as good as others who have tried this recipe..kalau tak sebagus mereka mereka punya pun, dapat sipi sipi pun jadilah kan ;-)

after waiting for almost 2 hours, finally my cinnamon bread sudah siap…and guess who eats it the most? owh! dia ye! bukan saya… saya makan sikit je…dia yang laaaju jek makan roti itu tau! masa i tengah beria nak amik gambar roti ni pun masih sempat jugak dia sambar a few slices hokkay!

well, definitely worth a try and definitely will make this bread again and again coz i like it a lot!

step by step punya recipe di dalam bahasa malaysia ada kat sini ye!

For the Dough
2 3/4 cups plus 2 tablespoons all-purpose flour
1/4 cup granulated sugar
2 1/4 teaspoons (1 envelope) active dry yeast
1/2 teaspoon salt
4 tbsp unsalted butter (saya guna anchor unsalted)
1/3 cup whole milk (saya guna low fat dutch lady milk)
1/4 cup water
2 large eggs, at room temperature
1 teaspoon pure vanilla extract (saya guna 1 tbsp vanilla essence)


For the Filling
1 cup granulated sugar
2 teaspoons ground cinnamon
1/2 teaspoon fresh ground nutmeg
4 tbsp unsalted butter, melted until browned

 

Method


In a large mixing bowl (I used just the bowl of my stand mixer) whisk together 2 cups flour, sugar, yeast, and salt.Set aside
Whisk together eggs and set aside
In a small saucepan, melt together milk and butter until butter has just melted. Remove from the heat and add water and vanilla extract.  Let mixture stand for a minute or two, or until the mixture registers 115 to 125 degrees F (sehingga suam suam kuku)
Pour the milk mixture into the dry ingredients and mix with a spatula. Add the eggs and stir the mixture until the eggs are incorporated into the batter. The eggs will feel soupy and it’ll seem like the dough and the eggs are never going to come together. Keep stirring.

Add the remaining 3/4 cup of flour and stir with the spatula for about 2 minutes. The mixture will be sticky. That’s just right.


Place the dough is a large, greased bowl. Cover with plastic wrap and a clean kitchen towel. Place in a warm space and allow to rest until doubled in size, about 1 hour. *The dough can be risen until doubled in size, then refrigerated overnight for use in the morning. If you’re using this method, just let the dough rest on the counter for 30 minutes before following the roll-out directions below. saya rollkan after 1 hour and surprisingly the dough dah tak sticky anymore

While the dough rises, whisk together the sugar, cinnamon and nutmeg for the filling. Set aside. Melt 2 ounces of butter until browned. Set aside. Grease and flour a 9x5x3-inch loaf pan. Set that aside too


Deflate the risen dough and knead about 2 tablespoons of flour into the dough. Cover with a clean kitchen towel and let rest for 5 minutes. On a lightly floured work surface, use a rolling pin to roll the dough out. The dough should be 12-inches tall and about 20-inches long. If you can’t get the dough to 20-inches long… that’s okay. Just roll it as large as the dough will go. Use a pastry brush to spread melted butter across all of the dough. Sprinkle with all of the sugar and cinnamon mixture. It might seem like a lot of sugar. Seriously? Just go for it (saya kurangkan sikit sugar)


Place a rack in the centre of the oven and preheat to 350 degrees F. Place loaf in the oven and bake for 30 to 35 minutes, until the top is very golden brown. The top may be lightly browned, but the centre may still be raw. A nice, dark, golden brown will ensure that the centre is cooked as well.

Remove from the oven and allow to rest for 20 to 30 minutes. Run a butter knife around the edges of the pan to loosen the bread and invert onto a clean board. Place a cake stand or cake plate on top of the upside down loaf, and carefully invert so it’s right side up. Serve warm with coffee or tea.

I think this bread is best served the day it’s made, but it can also we wrapped and kept at room temperature for up to 2 days

minced meat in basket

kejadian yang tak di sangka sangka

sebenarnya nak plan nak buat tavuklu pide tapikan sebab i terlupa some ingredients for the bread tu maka jalan senang is taruk all the fillings tu dalam bread baskets nih hihi

malas betul nak buat lagi skali n then have to wait for yeast and dough to proof maka i chose the shortcut one ;-)

okay, here’s the recipe

Ingredients

8 keping roti gardenia di potong bahagian tepi dan di sapu butter pada dua dua belah

250 gm of minced meat.
1 biji bawang besar – potong dadu

1 biji tomato – potong dadu

1/2 biji capsicum – potong dadu

1 tbsp dried basil

2 biji bawang putih – potong dadu
1 batang celery – hiris nipis
1 tbsp black pepper
1 tsp salt
2 tbsp Olive oil

4 keping cheddar cheese slices

method

panaskan oven pada suhu 180 c

masukkan roti yang telah di salut dengan butter tadi ke dalam muffin cases dan bakar selama 10 minit di dalam pre heated oven

at the same time, panaskan olive oil dan tumis bawang putih dan bawang besar sehingga wangi]

then masukkan minced meat, biar sampai minced meat tu kering air and agak masak then masukkan bahan lai dan kacau sekejap biar rata, terus tutup api

then, masukkan bahan fillings tadi ke dalam setiap basket roti tadi dan tutup dengan cheddar cheese slice dan bakar lagi selama 10 minit atau sehingga cheese tadi melt

both of them suka sangat makan buns ni..si ayah suka wholemeal and si anak pulak suka twisted garlic bread ni. nasib baik si anak pun suka jugak whole meal twisted garlic bread tu. senangla kejer si ibu sebab tak payah nak susah susah buat 2 kali kejer kan! skali harung buat jek kan senang ;-)

masih guna happy flour recipe lagi and i rasa i dah boleh buat buns ni sambil tutup mata dah kot hahaha sebabnya asyik asyik kena buat buns ni ;-)

2 hari lepas bread flour habis n i malas nak pi beli beli..agak agak boleh tak i mogok meroti for one week?

for whole meal buns and twisted garlic bread tu, i tweak sikit the recipe sebab hubster tak nak manis sgt n i pun tk suka hasya makan benda manis manis sgt…

boleh tengok sini untuk basic sweet buns dough

Ingredients
(Basic Sweet Buns Dough)
200g  bread flour
100g whole meal flour
6g instant yeast
55g sugar (I used 1 tbs of sugar or sometimes tu i tak taruk sugar pun)
140ml luke warm milk ( I used 160ml milk)
1 egg
1/2tsp salt
45g butter

Steps:
1. Combine all ingredients in a mixer.
2. Beat at medium speed until it form a dough.
3. Continue to beat until it form a smooth and elastic dough.
4. Cover the dough and let it prove for 45-60mins.
5. Flatten the dough on a lightly floured surface.
6. Divide dough into about 55g each portion and rest for another 10mins. 
7. (for buns) Shape into round ball, add any fillings you like and in my case i use red bean and arrange it on a greased tray.
8. Cover and leave to prove for 45mins until it doubled in size.
9. Preheat oven to 190C.
10.Brush surface with milk and bake in a preheated oven for 10mins until buns is brown.
11.Remove buns from tin, brush surface with butter and cool on a wire rack.


Note: You can use this basic sweet buns dough to make any types of buns of your choice. If you prefer a softer buns, just add 1/2tsp of bread improver or softener. ( i didn’t use and never use bread improver or softener in my breads)

** for garlic bread, after step 6, roll the dough and twist it into breaded bread or whatever shape u like and then arrange them on the greased tray.  continue with step 8 & 9 and then brush the surface with garlic spread and then bake in the pre heated oven for 10 minutes or until the bread is brown

break fast dan breakfast

okay i confess…i belum habis lagi ganti puasa huhu..teruk sungguh kan cik minah ni :-PP

dunno lah why last year i tak ganti masa bulan syawal tu… now ni padan muka sebab masih tak habis habis lagi. eventually i know i will habiskan puasa ganti ni..gilosss kaaa kalau takmo habiskan ganti puasa ye..tapi erggghhhh why oh why i am so slow and lembab jek bila tiba nak ganti puasa tuh

ehehe enough with my rambling hokkay ;-P

here’s tuna in baskets or whatever name it is lah ye… i dunno apa nama menda alah ni tapi i suka sangat memakannya ngeh ngeh ngeh :-D

buat ini for my berbuka puasa the other day..haaaa patutnya nak buat kuih manis melayu tapi kemalasan melanda maka i buat jek tuna in baskets ni. senang dan cepat ajek nak buat menda alah ni..in 25 minutes je dah buleh makan dah  ;-)

here’s the recipe

ingredients

1 can Tuna Chunks in Water or in oil

ground black pepper (ikut suka nk banyak mana)

5-6  tbsp Mayonnaise

1 biji bawang besar - potong dadu

1/2 biji tomato dipotong dadu

1/2 biji capsicum dipotong dadu

1-2 tbsp perahan lemon or limau nipis pun ok jugak

roti – (suka hati nak banyak mana) di buang bahagian tepi

butter

cheddar cheese slice

Method

pre heat oven pada suhu 180 C

keluarkan tuna chunks and cuci kejap (i suka cuci sbb kalau tk cuci dulu nanti i akan terbau bau hanyir ikan) then toskan tuna chunks tadi

then masukkan bawang merah, pepper, tomato, capsicum, perahan jus lemon dan tuna chunks tadi ke dalam bowl dan gaul rata dengan mayonnaise.

then sapukan butter pada dua dua belah roti dan masukkan roti ke dalam muffin case. tekan sikit roti tu agar melekat ke bahagian tepi muffin case so nanti ada bentuk macam basket gitu ;-)

bakar dalam pre heated oven selama 10 minit

keluarkan roti dari oven dan masukkan tuna tadi serta letakkan cheese slices di atas tuna tadi dan bakar lagi selama 10 minit atau sehingga cheese tadi telah melt

siap ;-)

sebab makan ini waktu berbuka puasa maka ianya ketidak habisan. terus di masuk ke dalam fridge dan di keesokkan harinya di panaskan lagi di dalam oven selama 10 minit and voila..siaplah our breakfast pulak :-DD

happy happy flour makes happy happy bread

 

akhirnya terkena jugak tempias sizuka dan rotinya hahaha..jangan marah ye shidah :-)

actually buat roti ni pun secara tak sengaja sebab mulanya nak buat pizza for dinner..actually dah lama bebenor hasya dok pestering me for a pizza tapi i yang malasnya nak buat and tak buat buat aje. tetiba last friday terasa rajin plak nak try this roti recipe after i read about it at shidah’s blog and then pastu boleh pulak dok intai rina yang asyik guna this recipe jek for her mini pizzas tu…i was thinking, mesti best and senang je recipe ni sebab rina dok asyik guna recipe ni jek for her orders tu.

so, i pun mulakanlah operasi nak membuat pizza kengkonon tapi masa tengah tunggu dough tu naik tetiba jek my other half kata tak terasa nak makan pizza pulak, nak makan kat MFM ler pulak..errr..habis tu apa nak buat dengan dough tu kan? nasib baik hasya masih nak pizza, so i proceed je with 2 mini pizzas for her (habis 2 ketul mini pizzas tu cik adik ni makan) and the rest of the dough tu i buat jek buns with macam macam fillings. ha ah i taruk je lemon curd fillings, strawberry jam, nuttela and butter jek.

sempat bakar buns ni before keluar and by the time nak keluar tu buns ni dah siap and tetiba orang yang takmo makan pizza tadi kata “sedapnya bau” and mintak tapau seketul sebab nak makan dalam keta… bila dah makan..dia buleh tanya pulak..”u bawak seketul je ke?” lorrrr, tadi mintak seketul kan..so i bawak je lah seketul hihihi

Ingredients

1tsp water } then squeeze out liquid  (i didn’t add the raisins)

2. Beat at medium speed until it form a dough and add in the butter.
3. Continue to beat until it form a smooth and elastic dough.
4. Cover the dough and let it prove for 45-60mins.
5. Flatten the dough on a lightly floured surface and knead in the raisins.
6. Divide dough into about 55g each portion and rest for another 10mins.
7. Shape into round ball and arrange it on a greased tray.
8. Cover and leave to prove for 45mins until it doubled in size.
9. Preheat oven to 190C.
10.Brush surface with milk and bake in a preheated oven for 10mins until buns is brown.
11.Remove buns from tin, brush surface with butter and cool on a wire rack.

cherry bread pudding

ada roti yang dah nak expire and biasa la takmo bagi mr tong kenyang, kena lah do something with it kan!

nasib baik ada beberapa bijik cherry kepunyaan hasya..ha ah kepunyaan dia sebab dia yang suka sangat makan cherry…so kan masa dia pi kindie tadi, i pow lah sikit cherry tu hikhik :D

jaaadi lah cherry bread pudding ni and sebab buat dalam bekas kecik, jadilah cherry bread pudding cupcakes

okay, ini recipe nya. btw, i buat separuh adunan je and dapatlah 6 biji cupcakes

BAHAN BAHAN

for the custard

2 eggs

115 gm castor sugar

1 tbsp vanilla essence

450 ml whipping cream

for cupcakes

12 keping roti gardenia – i tk buang pun yg keras tepi tu ;-)

4 tbsp unsalted butter

beberapa biji cherry – i guna about 12 biji – di hiris nipis

 

CARA CARA

untuk custard, cream eggs, sugar and vanilla essence in a bowl and then add whipping, stir well and put aside

then preheat the oven to 175 C

grease cupcake tins with little melted butter

then put butter on  both sides of the bread and cut it into small pieces and push them into the cupcake mould, covering the bottom

add a layer of cherries and then pour a layer of custard over the cherries

put another layer of bread, cherries and custard one more time

place the mould in a baking tray and pour boiling water into the tray until it reaches half way up the moulds

bake until golden and firm, about 25-30 minutes

turn the pudding out of the mould and serve warm

a silly mistake and a pumpkin bread

yes it was a super silly mistake and my pumpkin bread turned out yikessss according to my dotter la….haiii kanak kanak tu cukup pandai complaint tau!

kalau perasan the first picture tu gambor pumpkin bread yang tak menjadi lah tu hikhik :D

pumpkin bread tu tak menjadi sebab i tersalah taruk baking powder instead of baking soda. haisssh memang ler bread tu naik menggunung jugak tapi kan the texture  ergggh sungguh keciwa tau! entah lah tak tau nak cakap, memang takde texture yang gebusss and menggoda lah

then, tak puas hati punya pasal and sebab ada sikit lagi belen pumpkin tu, so i buat lagi petang semalam and this time i taruk baking soda ye!

haaaa menjadi pun…and taste dia sungguh lajat…emmm nak kata macam kek pun ada gak

Ingredients
  • 3 1/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground nutmeg
  • 2 cups solid pack pumpkin puree –to make the pumpkin puree, you can simply boil/roast the pumpkin until it becomes tender. ,
  • 1 cup vegetable oil
  • 1/2 cup chopped walnuts – i used 1 small box of raisin brand lego tu
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 3 cups white sugar
  • 2/3 cup water – i substitute with 1 cup of pumpkin soup
  • 4 eggs
Directions
  1. Grease and flour three 7 x 3 inch pans. Preheat oven to 350 degrees F (175 degrees C).
  2. Measure flour, sugar, baking soda, salt, and spices into a large bowl. Stir to blend. Add pumpkin, water, salad oil, eggs, and nuts. Beat until well combined. Pour batter into prepared pans.
  3. Bake for approximately 1 hour.

*** batter tu macam tak muat in my 7x3 inch pan, so i masukkan sikit dalam bundt pan tu and bila makan yg dalam bundt pan tu rasa macam makan muffin le pulak

i lagi suka yang dlm 7x3 inch pan tu

p/s:- if bakar dlm bundt pan tu jgn bakar selama 1 jam ye! kang hangus pulak..i baked around 35 minutes je.
