i am in love!!

 

wooot wooot….i am in love with this swiss meringue buttercream lorrrr :-)

ngeee heee heee being me yang really really hate buttercream tu kan especially those yang guna krimwell tu haiii sungguhlah tak buleh masuk tekak ni tau..so kan bila dah terjumpa satu satunya buttercream yang buleh masuk kat tekak ni memangla tersaaangatla kesukaan rasanya tau!

really love the texture yang soft itu tapikan masih ingat lagi memula skali buat buttercream ni..i nanges hokkay! hahaha poyo sungguh kan sebab buleh nangis plak :-P

owh! that was many many mooooooooons back..haaa kirala berapa banyak o tu kalau nak tahu zama bila i nanges tu hahaha actually masa memula mencuba recipe ni punya lah lama i dok beat the cream tu pasalnya i kan sangat pandai sebab terus wat in a big quantity gituh..haishh dah namanya baru nk mencuba haruslah in small quantity kan…hikhik anyway that was long time ago and now i know all i have to do is beat beat beat and insyaAllah the outcome is gorgeous ;-))

recipe adapted from here. i just copy ad paste aje ye!

** For a wedding cake (or most of one, depending on the size)
2 cups of egg whites (approx. 12 large)
3 cups sugar
5 cups butter, softened (2 1/2 pounds, 10 sticks)
1 tablespoon vanilla extract

** For a 9-inch cake (plus filling, or some to spare)
1 cup sugar
4 large egg whites
26 tablespoons butter, softened (3 sticks plus 2 tablespoons)
1 teaspoon vanilla extract

For the tiniest amount, if you’re just practicing (or enough to cover 60 pieces of mini cupcakes pictured)
1/4 cup sugar
1 large egg white
6 tablespoons butter, softened ( i used scs unsalted)
1/4 teaspoon vanilla

method

Whisk egg whites and sugar together in a big metal bowl over a pot of simmering water. Whisk occasionally until you can’t feel the sugar granules when you rub the mixture between your fingers.

Transfer mixture into the mixer and whip until it turns white and about doubles in size. (Here’s a tip: when you transfer to the mixer, make sure you wipe the condensation off the bottom of the bowl so that no water gets into the egg whites. This can keep them from whipping up properly.)

Add the vanilla.

Finally, add the butter a stick at a time and whip, whip, whip.

note from smitten kitchen: Do not have a panic attack when this takes a while to come together (though I did every time). One super-large batch took 15 minutes, but it did and will come together. Patience, young Jedis.

An Angry Bird In One Bowl Chocolate Cupcake

pusing kiri nampak angry bird. pusing kanan nampak angry bird jugak ;-)

haiii tengah musim beburung marah agaknya ye now ni!

and hasya is one of them! asyik mintak anything with angry birds aje tau! slalunya i bolayankan apa yang dia mintak tu but then bila dia mintak nakkan cupcakes with an angry birds topping tu tetiba tercair ler pulak ferasaan mak dia ;-)

dia nak bawak pi kindie n nak share with her friends and teachers. since today is her last day at kindie, makanya mak dia pun agree lah nak buatkan cupcakes n angry bird toppings tu

berpenat lelah sehari semalam tau mak dia buatkan angry birds toppings tu..hadoiii sakit pinggang and sebab sakit pinggang punya pasal i think i slept like a log last nite. tak sedar jam dah bunyi…sudahnya terlambat bangun and dalam kecoh kecoh nak hantar hasya pi kindie tu i terlupa nak amik gambar cupcakes ni :((

anyway, ini aje gambar yang ada and here’s the recipe for one bowl chocolate cupcakes.

Ingredients
  • 2 cups white sugar
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk ( i used buttermilk)
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
Directions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two nine inch round pans.
  2. In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans.
  3. Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely. ( in my case (cupcakes),  i baked for 20 minutes only)

this recipe is definitely a keeper coz tersangatlah easy peasy…just put everything in your mixer and taraaa…sudah siap..tinggal bakar ajek..i loike ;-)

4 Eggs

1 Cup White Sugar

1 Cup Brown Sugar

1 Cup Vegetable Oil

2 Cups All Purpose Flour

2 tsp. Baking Powder

1/2 tsp. Baking Soda

1 tsp. Salt

1 1/2 tsp. Cinnamon

1/2 tsp. Nutmeg

3 Cups Grated Raw Carrots

1/2 Cup Raisins

1/2 Cup Finely Chopped Nuts (optional – and omit if serving to small kids) – i add walnuts017

method

Beat eggs well in a large bowl, and add sugars in gradually, beating until light.

Beat in oil.

In a separate bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

Stir into egg mixture. Stir in carrots, raisins and nuts(if using).

Pour into a greased and floured 13X9 pan, and bake in a 350 degrees oven for 35-40 minutes. (saya buat separuh adunan dan bakar dalam muffin cups ;-))

chocolate + cream cheese = sedap ;-)

last friday buat cupcakes ini for a friend. asalnya resepi untuk sebijik cake tapi i buat cupcakes sebab i pun nak jugak merasa  kesedapan cake ni hikhik

owh! memang sedap rupanya ye! friday tu jugak rina ada postkan entry about this cake and since i tengah malas nak ytpe the recipe..so i copy je lah from rina ye! ;-)

Ingredients:-
1 cup all purpose flour
1/4 cup cocoa powder
3/4 tsp bicarbonate soda
1/4 tsp salt
1/2 cup granulated sugar-used 1/4 cup
1/2 brown sugar- used 1/4 cup
65g butter (anchor)
1 large egg
1 tsp vanilla extract  (i used vanilla essence)
1/4 cup buttermilk- I used plain 1/4 cup of low fat milk with 1 tsp apple cider vinegar 
1/2 cup warm water


Method:-

Set your oven at 170C
Prepare your cake tins.
Sieve flour, cocoa powder, bicarbonate soda, salt, and set aside.
Beat butter with sugars until light and fluffy, add eggs.
When all well incorporated add the dry ingredients (flour, cocoa powder etc) and alternate with liquid ingredients (buttermilk + warm water) in three portions, last incorporate the vanilla extract.
Bake for about 30 minutes or until just cooked

Cream Cheese Frosting
250 gm cream cheese (room temp)
125 gm butter (room temp)
1 cup icing sugar - sifted
1 tsp vanilla extract
juice of a squeezed slice of lemon, to rid the cheese taste


Beat cream cheese and butter, just until creamy, add the icing sugar, vanilla and lemon juice.

 

Chocolate Ganache-(make 1/2 the amount next time)
200ml double cream with at least 30% fat content-I used fresh cream
250g dark chocolate, chopped finely
a pinch of salt.

 In a double boiler, warm the cream until just at boiling point, add the chocolate & salt and stir. When all the chocolate has melted, remove for heat and continue stirring until all well mixed.
Let the cake cool completely, spread the cream cheese frosting and pour the ganache on top

coconut itu kelapa ye!

 

iya coconut itu kelapa and i love eating kelapa cupcake or kelapa cake or kelapa cookies ye! ;-)

lama menahan rindu nak makan coconut cupcakes akhirnya dapat jugak melepas rindu tuh….

buat cupcakes ni dua tiga hari lepas before the other half ke JB. dapat 6 bijik je, the other half makan sebijik, hasya tak makan coz tk suka coconut..so balance lagi 5 bijik tu siapa yang makan? laaaa siapa lagi kalau bukan i hahaha  :-D

kan dah kata i suka coconut cupcakes..i buat and i je lah yang makan dengan jayanya…hmmm bahagianya hidup hikhik :-D

recipe taken from 500 chocolate delights book

ingredients (saya buat 1/2 adunan je n dapat 6 biji gedabak size tu )

4 eggs

140gm caster sugar

115 gm self raising flour

1 tsp baking powder

85 gm desiccated coconut

115 gm unsalted butter, melted

for the topping

115 gm white chocolate chunks

2 tbsp toasted desiccated coconut

method

preheat the oven to 200 C

combine eggs and sugar in large bowl and beat for 2 to 3 minutes or until smooth

then sift flour and baking powder over the top of the creamed mixture

using wooden spoon/spatula, fold in the flour and add the coconut and melted butter and continue to fold in gently until all ingredients just combined

using the ice cream scoop, scoop the batter into the muffin cases

bake for 10 minutes or until well risen and golden brown

cool them first and u may prepare the topping

for the topping, melt the chocolate chunks in a bowl of simmering water and stir until smooth. then using a fork, drizzle the melted chocolate over the top of the cupcake and sprinkle with toasted coconut.

well, nak cakap, kali kedua buat rvc baru terasa kenikmatannya :-) itu je

semalam jumpa sorang blogger fren ni and dia suuuuka sangat ngan red velvet cake. 012

kengkonon nak surprised dia, saya pun buat aje lah red velvet cupcakes for her. buat cupakes sebab si pembuat pun nak merasa jugak ahahaha…dulu dah buat skali tapi kurang mendapat sambutan kat rumah ni sampai dah janji lah kat diri sendiri taknak buat lagi dah rvc nih sebab kurang sambutan kat rumah kan…ponat aiihhh buat cake then takdak owang makan :D

kali ni cuba buat cupcakes sebab bolehlah amik seketui dua untuk diri sendiri makan kan! hasya, hmmmm jangan harap dia nak makan rvc ni…nampak ajer color merah tu dia dah geleng kepala… the other half pun sama..anyway, takpe lah dorang takmo makan, i boleh makan kan hikhik

owh, back to my rv cupcakes ni..hmmmm kawan i suuuka… so, i pun suuuuka jugak la hihi

hokkay, here’s the recipe. i cuba recipe yang ni pulak kali ni. thank you dear!

Ingredients
1 1/4 cup sifted flour
1/2 tsp baking powder
1/2 tsp salt
1 tbsp cocoa powder
1 tbsp red coloring – saya guna pewarna merah brand nona je tp cuma ada 1/2 tbsp je kot – tak perasan red coloring dh habis :( 
1/4 cup soft unsalted butter – saya guna anchor
3/4 cup sugar
1 egg
1/2 tsp vanilla extract – saya guna 1 tbsp vanilla essence
1/2 cup buttermilk – saya guna 1/2 cup low fat milk plus 1/2 tbsp organic apple cider vinegar
1/2 tsp vinegar – saya guna organic apple cider vinegar
1/2 tsp baking soda



Method
1. Preheat oven to 175 degrees Celsius.
2. In one container, sieve flour, baking powder and salt. Set aside.
3. In a small container, combine cocoa powder and red coloring and stir well until form a paste (I added a little water).
3. Using a stand mixer, beat butter with sugar until light and fluffy. Add the egg, beat until blended. Add the vanilla extract and cocoa powder mixture, beat until well blended.
4. Add in sifted flour and buttermilk alternately. Beginning and ending with flour. (F-M-F-M-F)
5. In a small bowl, combine vinegar and baking soda and add it to your batter. Stir well with a spatula. 
6.  Spoon the batter into the cupcakes cases and bake for 20 minutes

7. Remove the tin from the oven and let them cool on wire rack.
8. Once cool,  top it with your cream cheese

 

Cream cheese frosting
125g cream cheese – saya guna philadelphia cream cheese
50g unsalted butter – saya guna anchor
80g powdered sugar 
1 cup fresh cream, whipped until stiff

 

 

 


Cream Cheese frosting: method
1. Beat cream cheese with butter until soft.
2. Turn mixer to low speed, add powdered sugar a little at a time. Whisk until well blended.
3. Add whipped cream, stir through with a spatula.

oreo cupcakes for hasya and friends ;-)

tadi berjumpa jumpaan dengan ex schoolmates yang dah 19 years tak jumpa

mak aihhhh lama gilosss tak jumpa dorang. actually jumpa 3 orang, yang sorang tu slalu jugak jumpa tapi the other 2 tu memang tak pernah jumpa since spm dulu.

actually i baked oreo layered cake for them tapi something had happened to that layered cake nanti i citer lah ye! yang buat i rasa tak jadi nak bawak sebijik kek tu. sudahnya i bawak sikit je layered cake tuh and tak puas hati punya pasal, i baked choc bottom banana square and also these oreo cupcakes. thanks a bunch to rima for posting this oreo cupcakes recipe masa i tengah mencari cari something very easy peasy and simple for kiddos and kebetulan pulak ada lagi oreos kat rumah kan! maka segeralah saya membuatnya hehe.

Ingredients
250g butter 
1 C sugar (sebab saya buat setengah adunan, saya kurangkan gula kpd 1/4 cup shj)
2 Cs of self rising flour - sift
1 tsp baking powder – sift
4 eggs
1 tsp vanilla essence
8~10 oreo biscuits – crushed together with the cream


Method

put everything except the oreo biscuits in a mixing bowl and whisk for 2 minutes.. don’t overbeat ok..

then, stir in crushed oreos and mix kejap n then stop

then pipe the batter into cupcakes casing


Baked in preheated oven of 170C for about 10 to 15mins

saya buat separuh adunan sahaja.

her fluffy banana cekodok ;-)

itu hasya yang panggil ye! i plak kata banana cupcake ni sebijik macam rasa banana cupcake yang i slalu makan masa kekecik dulu… hasya suka and dah tentu tentulah i pun suka :D

actually nak buat apam beras yg biasa tu untuk hasya tapi teringat izah ada buat muffin pisang coklat itu hari. kengkonon nak cuba lah tapi rupanya cocoa powder pun dah habis dong! so, i omit the cocoa powder and pastu terperasan plak brown sugar pun tarak..i used the normal castor sugar instead

the end product..jadi lah this fluffy banana cekodok for hasya ehehe :D

anyway, i don’t know lah, bila tengok izah buat cantik aje mekarnya tapi kenapa lah i punya tk mekar mekar ni.

well, no big deal pun cupcake ni tak mekar coz i like it so much..bak kata hasya, “this cekodok is sooo fluffy” haaa memang fluffy sangat..berbijik bijik dah we all duorg makan hikhik

hokkay, here’s the recipe. originate from chef hanieliza and i just copy from izah. thanks arr izah ye…nanti kalau nak makan apam mekar, akak dtg umah izah je lah ek ;-)

Bahan A [Ayakkan]
1 cawan tepung gandum
1 s/b serbuk koko  ( saya tk masukkan)
1/2 s/k soda bikarbonat
1/2 s/k baking powder
Sedikir garam

Bahan B
1/2 cawan pisang emas/berangan lecek  ( saya guna pisang emas)
1/2 cawan minyak
3/4 cawan gula perang  ( saya guna 1/2 cawan gula castor)
1 biji telur [pukul sedikit ngan garfu]

Cara
1. Ayakkan bahan A dan masukkan dalam mangkuk.
2. Masukkan bahan B dan kacau rata.
3. Masukkan dalam acuan kecil atau loyang.
4. Kukuskan selama 30 minit atau sehingga masak

new year eve – pineapple upside down cupcakes

buat ni sebab ada belen pineapple siang tu. i rasa banyak jugak belennya tapi bila masa i nak baked this cupcakes baru i noticed yang my pineapple tu dah tinggal sikit je…OOOO ada orang dah pow my pineapple rupanya ;-)

nasib baik buat half adunan je and dapat lah 9 ketul cupcakes tapi pineapple chunks tu just enough for 6 cupcakes je…lelain tu i bakar plain macam tu je lah

pastu masa tengah buat tu, entah apa i mengelamun pun i tatau tapi bila tengah bakar cupcakes tu baru i teringat why oh why i pi taruk sikit sikit je butter and sugar for the topping tuh! patutnya letak 1 tablespoon tp memang sah sah i mengelamun, i pi letak 1 tablespoon butter and sugar tu for all 6 pieces of cupcakes tu…so u can imagine la sikit bebenor lah kan…harap harap cupcake i menjadi

well, the cupcakes turned out good but not as good as it looks in these photos ye! itu juices/topping yang menjejeh jejeh meleleh leleh tu takde tau! so, sebab nak jugak ada lelehan juices tu makanya i cairkan sugar macam ala ala nak buat gula hangus tu and curah je on top of the chopped pineapples tu….well, pineapple upside down cake kan kena ada juices yang meleleh gitu rite? nak tahu rasanya? hmmmmm lajat bangat rasanya tau! lagi satu gula hangus tu buat ada rasa crunchy sikit hihihi yummeh kata hasya yang hanya makan pineapple and juice tu je

well, here’s the recipe. i took this from 500 cupcakes recipe book

ingredients

for the topping

570 gm pineapple chunks

125 gm unsalted butter, melted

150 gm brown sugar

for the cupcakes

225 gm unsalted butter, softened

225 gm caster sugar

225 gm self rising flour

1 tsp baking powder

4 eggs

1 tsp vanilla essence

*** i add 4 tbsp fresh milk utk separuh adunan ni ye!

methods

preheat the oven to 175 C

then grease muffin cups with butter and dust with a little flour, tapping out the excess

in the bottom of each cup, drizzle 1 tbsp melted butter, 1 tbsp pineapple and 1 tbsp brown sugar.

then place all the cupcakes ingredients in the mixing bowl and beat with the electric whisk until the batter become smooth and pale…approximately about 3-5 minutes

spoon the batter on top of the pineapple mixture in each cup. then bake for 30 minutes…

finally it’s over and we are ready to go ;-)

errr, actually belum pack satu benda pun lagi ahaksss! over betul minah ni ye! tak sabar sabar nak balik kampung ;-O

anyway, as promised here’s the fondant recipe ye!

BAHAN A
Sekilo aising sugar (beli dari baking shop sahaja dan ayak tiga kali)
BAHAN B
5 tsp gelatine serbuk
2 tsb liquid glucose
1 tbs gliserin
1 tbs shortening
1/2 tsp cream of tar tar
Cara Membuatnya
1. Isi serbuk gelatine dalam mangkuk atau mug yang diisi dengan 1/4 cawan air kosong.
2. Setelah gelatine kembang (dalam 30 saat sahaja), masak di atas api sederhana sahaja menggunakan teknik double boil.
3. Biarkan gelatine fondant masak sampai jernih warnanya (dalam 2-3 minit sahaja) dan masukkan liquid glucose.
4. Kemudian masukkan gliserin pula.
5. Setelah semua bahan ini sebati, baru masukkan shortening. Biarkan ia cair sepenuhnya (dalam seminit dua).
6. Akhir sekali masukkan cream of tar tar.
7. Biarkan atas api lagi beberapa ketika dan angkat. Tuang ke dalam bekas berisi gula icing dan uli sampai menjadi doh (macam doh tepung biasa). Kalau menggunakan electric mixer, sapu mangkuknya dengan shortening, tuang icing sugar dan masukkan adunan gelatine tadi dan uli dengan kelajuan sederhana.

(tsp - camca teh atau tea spoon)
(tbs - camca besar atau table spoon)

resepi ni i dapat from kak jun masa i pi blajar rose fondant tu last year…dah lama dapat, tapi baru now sibuk nak buat roses ni….errr dulu dah pernah buat setakat 2-3 ketul and then datang pulak mood M.A.L.A.S nak berfondant fondant ni so i stop aje lah…now, bila dah lama tinggal mula lah terpikir kenapa lah itu hari malas betul nak bermain main dengan cik fondant ni ;-)

then, hasya tarukkan sedikit buttercream kat atas cupcake yang dah di potong tadi

then, mommy amik bahagian atas yang telah di belah dua tadi and letak secara menyerong sikit kat atas buttercream tadi

pastu hasya tarukkan choc chips on top of buttercream – kengkonon macam butterfly punya badan la….

see…our butterflies are ready to fly…owh, hasya tanya mana sesungutnya? LOL… mommy tak tau camner nak buat sesungut butterfly lerrr:D

i used this recipe for the cupcakes and for buttercream i used 350gm icing sugar and 250gm of krimwell

mixed them in the electric mixer  until well blended

ntahla tapikan rasanya sebab i memang suka makan banana cakes dengan cream cheese yang i taruk extra lemon juice kat dalam tu…huishhh best tau..rasa lemak manis pisang bila berganding tangan dengan lemon cream cheese ni…eh, ini kata tekak i ye! kang mana tau tetiba u all pi try banana cakes ngan lemon cream cheese and rasa macam tak ngam je….kan tekak memasing tak sama..macam tekak i kata sedap makan macam ni tapi tekak husband and anak i kata tak sedap makan banana cake ngan lemon cream cheese ni..dorang berdua suka makan banana cake macam tu je…anyway takpe lah dorang tk suka kan..sebabnya more cream cheese for me ngeee hehe :D

okay, here’s the recipe for the cupcakes..i amik recipe ni from cupcakes book..

ingredients ( i buat 1/2 bancuhan saja so dapatlah 10 biji cupcakes)

225gm unsalted butter, softened

225gm caster sugar

225 gm self raising flour

4 eggs

1/4 tsp nutmeg

225 gm mashed ripe bananas

 

Methods

preheat oven to 175 C

combine butter, sugar, flour, eggs and nutmeg in a mixer and beat it until smooth (about 2-3 minutes)

then stir the mashed bananas until well combined

then spoon the batter into the cupcakes cases

bake for 25 minutes

and here’s the recipe for lemon cream cheese

BAHAN BAHAN ( i buat sikit je n tk ikut sukatan ni…main agak2 je)

200 gm cream cheese, at room temperature

1 tsp vanilla extract

175 gm icing sugar, sifted

2 tbsp lemon juice

CARA CARA

using electric mixer, beat the cream cheese until it is soft and smooth

then add the icing sugar, lemon juice and vanilla essence

beat until smooth and well combined.

then u may swirl or twirl the cream cheese on top your cupcakes

seeee……..my topping was a bit runny, i guess i terlebih agak the lemon juice punya quantity kot…mana taknya suka sangat rasa lemon tu sampai i press banyak banyak juice tu..

classic chocolate buttercream cupcakes for charity

 

hari tu kan i buat cupcakes for charity..my fren nak 500 pieces. so ibuatkan 250 pieces vanilla flavor and and 250 tu i buatkan chocolate flavor..heee namanya je classic chocolate buttercream cupcakes kan..tapikan resepinya amat mudah dan senang gitu…

haaa la…resepinya lebih kurang sama dengan resepi vanilla flavor cuma untuk chocolate flavor ni kena add kan cocoa powder je lah…haaa kan senang and cepat je nak membuatnya kan…btw, i ni kan suka sangat buat segala benda yang senang senang je :D

ingredients

plain vanilla cupcakes for charity

 

uhuh!!!! lamanya i tinggalkan dapur i ni :D

bukannya tak masak, masak tapi mostly masak lauk pauk yang sama je, so itu yang tak ter”update” je resepi kat sini

malas la nak ulang ulang benda yang sama kan!

anyway, vanilla cupcakes ni i buatkan untuk charity purpose a couple of weeks ago.

hmmm bila date i buat cupcakes ni pun i dah tak ingat dah :D

anyway, resepi cupcakes ni senang sangat tau sampai i pun dah hafal dah camner nak buatnya :-D

my favourite vanilla cupcakes

dalam banyak banyak resepi vanilla buttercake or cupcakes kan..inilah yang paling i suka :-D

bukan i je yang suka, even my other half and my pickle pie and niece and nephew pun suka lah memakannya tau!

so, tiap kali ada friends yang nakkan vanilla buttercake or cupcakes, memang i will surely use this recipe

ini cupcakes yang i buat a couple of days ago for my friend’s sister’s wedding

then i just tarukkan simple fondant flower on top – ini untuk guests katanya

ini pulak vanilla cupcakes (resepi yg sama jugak) yang i buat dah lama dah ni…tapi this time i taruk buttercream frosting je

and here’s the recipe

ingredients
125gm softened butter
2 eggs
3/4 tsp vanilla essence
180gm self raising flour
1/2 cup milk
170gm caster sugar
1/4 tsp salt


method
preheat the oven at 180 degree.
combine all ingredients in a mixing bowl and beat until smooth with electric mixer.
then place the mixture into the cupcakes trays using a spoon, filling each until 3/4 full. bake for 15-20 minutes. sudah siap...very easy peasy kan!
