well, nak cakap, kali kedua buat rvc baru terasa kenikmatannya :-) itu je
semalam jumpa sorang blogger fren ni and dia suuuuka sangat ngan red velvet cake.
kengkonon nak surprised dia, saya pun buat aje lah red velvet cupcakes for her. buat cupakes sebab si pembuat pun nak merasa jugak ahahaha…dulu dah buat skali tapi kurang mendapat sambutan kat rumah ni sampai dah janji lah kat diri sendiri taknak buat lagi dah rvc nih sebab kurang sambutan kat rumah kan…ponat aiihhh buat cake then takdak owang makan :D
kali ni cuba buat cupcakes sebab bolehlah amik seketui dua untuk diri sendiri makan kan! hasya, hmmmm jangan harap dia nak makan rvc ni…nampak ajer color merah tu dia dah geleng kepala… the other half pun sama..anyway, takpe lah dorang takmo makan, i boleh makan kan hikhik
owh, back to my rv cupcakes ni..hmmmm kawan i suuuka… so, i pun suuuuka jugak la hihi
hokkay, here’s the recipe. i cuba recipe yang ni pulak kali ni. thank you dear!

Ingredients
1 1/4 cup sifted flour
1/2 tsp baking powder
1/2 tsp salt
1 tbsp cocoa powder
1 tbsp red coloring – saya guna pewarna merah brand nona je tp cuma ada 1/2 tbsp je kot – tak perasan red coloring dh habis :(
1/4 cup soft unsalted butter – saya guna anchor
3/4 cup sugar
1 egg
1/2 tsp vanilla extract – saya guna 1 tbsp vanilla essence
1/2 cup buttermilk – saya guna 1/2 cup low fat milk plus 1/2 tbsp organic apple cider vinegar
1/2 tsp vinegar – saya guna organic apple cider vinegar
1/2 tsp baking soda
Method
1. Preheat oven to 175 degrees Celsius.
2. In one container, sieve flour, baking powder and salt. Set aside.
3. In a small container, combine cocoa powder and red coloring and stir well until form a paste (I added a little water).
3. Using a stand mixer, beat butter with sugar until light and fluffy. Add the egg, beat until blended. Add the vanilla extract and cocoa powder mixture, beat until well blended.
4. Add in sifted flour and buttermilk alternately. Beginning and ending with flour. (F-M-F-M-F)
5. In a small bowl, combine vinegar and baking soda and add it to your batter. Stir well with a spatula.
6. Spoon the batter into the cupcakes cases and bake for 20 minutes7. Remove the tin from the oven and let them cool on wire rack.
8. Once cool, top it with your cream cheeseCream cheese frosting
125g cream cheese – saya guna philadelphia cream cheese
50g unsalted butter – saya guna anchor
80g powdered sugar
1 cup fresh cream, whipped until stiff
Cream Cheese frosting: method
1. Beat cream cheese with butter until soft.
2. Turn mixer to low speed, add powdered sugar a little at a time. Whisk until well blended.
3. Add whipped cream, stir through with a spatula.

ReplyDeletei used sfl cup yg kecik n tak tau pulak ths cake meninggi..so kan habis tumpah sememeh je rupa my cupcakes. dah lah sememeh, i have to cut the upper part in order to taruk the cream cheese frosting tu..rugi je kan:((
i think can get 12 cups yg kecik tu kot
