240310 – Banana cake

dah 2 hari dah my other half dok bising yang pisang emas di bawak belayar tu dah masak ranum bukan di atas peti ye! :-)

hari sebelum tu i dah buatkan cekodok pisang, tapi tak selera lah pulah nak makan cekodok pisang every day kan!

so, semalam lepas je i baked the vanilla cupcakes (owh i’ll post this recipe later okay!), i teruslah buatkan banana cake ni skali

dah siap siap masak tu, i pulak asyik masyuk menghias hias cupcakes tu sampai totally lupa about my banana cake until lah this morning

ooops, i suka makan banana cake bila baru kelura from oven and ni pulak dah one day dah kan…so, i was thinking to balut je my banana cake with the cream cheese…hmmm laaagi sedap kan!

tapikan, belum sempat i buat cream cheese topping pun lagi, datang je hasya nak sepotong then, my other half pulak datang nak sepotong jugak…pastu hasya datang lagi and bagitau yg her friend (anak my neighbour pun nak jugak) sudahnya i potong kecik2 and bagi half of it to my neighbour's dotter…yang lain tu we all makan je as our breakfast tadi hehehe…

tamatlah riwayat banana cake i tuh…

here’s the recipe…amik from kid’s birthday cakes punya buku :-)

Ingredients

280 gm plain flour ( i used self rising flour, so i omit the soda bicarbonate n baking powder)

3/4 tsp soda bicarbonate

1 tsp baking powder

1/2 tsp salt

4 bananas ( i used 6 pisang lemak manis)

2 large eggs

200 gm granulated sugar (i used 150gm)

115 ml vegetable oil

1 tsp vanilla extract

125 ml buttermilk ( i don’t have buttermilk so, i substitute with 1 cup of milk and 1 tbs lemon juice, mix it together and leave for 5 minutes then add in the batter)

Method

preheat the oven at 180 degree

peel the bananas and mashed them with a fork

beat the eggs and sugar together until fluffy and light

add the oil, then the vanilla extract and mix well

add the mashed bananas and continue beating until well blended

pour in the flour and buttermilk alternately starting and ending with flour and don’t forget to add in your salt too.

continue beating until well blended and then pout the batter into the prepared baking pan

bake in the oven for 30 minutes or until skewer comes out clean…

here’s my banana cake :-)
