tadi petang i wanted to bake prune layer cake for a friend but tahu tak apa dah jadi….hmmm i ended up by baking this delicious coffee- almond muffins heheh ;-)
ini gara gara terpandangkan muffins ni kat anie’s blog tadi. dunno lah what is wrong with me nowadays ni…pantang nampak anything with coffee je sure i teruja nak aje memakannya or meminumnya tau! errrr dulu takde lah suka sangat coffee ni….ni yang pelik nih hikhik
anyway, to my dear friend tu, esok esok lah i bake prune layer for you ye! ini hari i nak melayan tekak i jap :D
well, actually this muffin is called hazelnut-coffee muffins but then since i don’t have hazelnut coffee flavor so, i panggil je lah coffee- almond muffins sebab i used the normal coffee and taruk roast almond instead of almond flakes ;-)
okay, here’s the recipe. i copy it from anie and she got it from lydia teh’s my kitchen blog
Ingredients (makes 6 regular muffins)
60ml fresh milk
2 tbsp hazelnut flavour instant coffee (I used normal instant coffee)
60g butter, soften
50g fine granulated sugar
1 egg
150g cake flour, sift together with baking powder (I used standard flour)
1½ tsp baking powder
Almond slices (I used roast almond)
Methods:
Heat up milk lightly and dissolve instant coffee in milk. Set aside and allow to cool.
Preheat oven at 180ºC.
Whisk butter until creamy, add in sugar and continue to whisk until light and fluffy.
Add in egg and whisk until well combine.
Fold in sifted flour in batches, alternate with coffee milk.
Transfer batter into muffin cases and sprinkle almond slices (roast almond pieces) over the surfaces.
Turn oven down to 175ºC and bake for 20-25 minutes. Cool on rack.
i like it and so does hasya…anak i tu pun dah pandai makan anything bercoffee coffee jugak lerrrr
nampak sedap and cantik.. cup dia tu beli kat kedai baking2 ke zarin? comel sungguh.. dengan almond berketul2 kat atas tu hehe..

ReplyDeletemmmmmm mmg sedap kan coffee muffin ni, biler tgh bake harum jer baunya. Senang nak buat plak tu ;) I like the muffin cases. Dkt sini tak jual muffin cases yg kiut2 mcm gitu. Kalau ada pun yg mahal giler 25 pieces $9 yikkkesss tak kuasa nak bli yg mahal2 cam gitu :D
