you know, that banana and walnut muffins are so yummy!
no wonder la the owner call it awesome banana muffins ;-)
well, actually i wanted to try out her carrot cake recipe but then ntahlah masa geledah my fridge tu ternampak 4 biji pisang yang dah takde rupa pisang dah kot…hahaha ada bentuk pisang tapi dah lebam ajek rupa dia..tak ingat zaman bila i campak dalam fridge tu.. sayang nak buang sebab bila tengok isi dia masih cantik lagi..so i mashed it and at first nak buat cekodok aje tapi malas nak menggoreng, so i changed my mind and tried this awesome recipe!
yes, the method is so simple and yet the result was superb and berbaloi baloi lah mencuba coz everybody love it! keluar je from the oven, i had 2 muffins in one go okay and the next day i had another 2 during breakfast pulak ;-)
owh! i like it more when i eat it on the very next day tu….texture dia lagi moist gitu!
anyway, here’s the recipe. as for the cream cheese frosting, i just use this recipe ajek
Banana Muffins (makes 12 muffins)
source: catcancook
ingredients
3 or 4 Large bananas, mashed (the more bananas the moister, so I use 4)
1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)
1 slightly beaten egg
1/3 cup melted butter (i used anchor unsalted)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups flour
1/3 cup chopped walnut (i add)
method
Mix the mashed banana, sugar, egg and melted butter together. Set aside. In a separate bowl, mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients all together! Pour into greased muffin tins, and bake in 175 degrees C oven for approximately 20-25 minutes. Enjoy!
