oatmeal muffin for a very hungry tummy :-)

hullo peeps! just came back from isetan SALE ye! hehe tak beli banyak pun just a couple of hasya’s blouse  errrkkk kanak kanak itu cepat sungguh tumbesaran dia…banyak baju macam dah muat muat je i mean her body tak expand but her body macam meninggi. so most of her blouse dah tunjuk belly button and being her yang very the very shy about showing off her belly button tuh (bagus bagus dah tau malu kan hasya) dia takmo pakai ler her existing blouses tu ;-)

aaaanyway, back to my oatmeal muffin nih. baked them coz that’s the only thing i can find in my pantry besides all purpose flour and eggs…hmmmm i dunno why i had oatmeal in pantry tapikan i rasa sebab kengkonon nak try breakfast cara sehat but then tekak i ni tak tertelan sungguh bila tengok itu soaked oatmeal ye :D

tadi sebab kelaparan bangat although lunch tadi i dah bedal sepinggan nasi with asam pedas kow kow sedap tuh..now my tummy sudah very the very hungry lerrrr..itu pasal i gamble je buat muffin ni sambil berdoa agar sodap di makan ye!

the result! owh! i like it so much! so gebusss youuuuu! tadi je i dah bedal 4 biji dah and sat tadi i tanya the other half, nak rasa tak muffin ni, dia jual mahal, dia kata dia still kenyang :P

owh kenyang! takpe takpe i sudah suka sama ini muffin so i will eat it again tomorrow for breakfast lah gamaknya :D

Ingredients

  • 1 cup quick-cooking oats
  • 1 cup buttermilk  ( i used 1 cup of dutch lady full cream milk and 1 tbsp of apple cider vinegar – add together and leave for 5 minutes ye!)
  • 1 egg, beaten
  • 1/2 cup packed brown sugar
  • 1/4 cup vegetable oil
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • and i add 2 packets of raisins -  lego brand tu

Directions

In a bowl, soak oats in buttermilk for 15 minutes. Stir in egg, sugar and oil.

Combine flour, baking powder, baking soda, salt and raisins; stir into oat mixture just until moistened.

Fill greased or paper-lined muffin cups three-fourths full.

Bake at 200 degrees C for 16-18 minutes or until muffins test done. Cool in pan 5 minutes before removing to a wire rack.
